The Story

ON THE NOSE:

The nose delivers floral aromas such as hawthorn, lilac and violet as well as fruity aromas of apricot, apple and fresh pineapple. After the wine has warmed a little, discreet notes of coffee will appear.

ON THE PALATE:

It is harmonious, fresh and elegant. On the first sip, notes of yellow fruits, pineapple, apricot and mirabelle plum complement each other. Notes of white flowers, hawthorn, lilac
and jasmine will appear afterwards. This beautifully crisp and fresh cuvée leaves a feeling of purity and fruitiness on the palate followed by beautiful flavours of green apple and lemon.

FOOD MATCHES:

Very elegant, this CELEBRIS VINTAGE 2002 extra-brut cuvée is ideal as an aperitif. It will also be perfect with free-range poultry, sweetbread with a lemongrass sauce or fishes served in a sauce
like monkfish with a browned butter sauce. This cuvée is made to please the most refined palates.

Wine Information

IN THE GLASS:
Pale yellow colour with green tints, typical of the Chardonnay. Fine, abundant and persistent effervescence with a light but sustained ribbon.

ON THE NOSE:
An elegant bouquet where the aromatic finesse is revealed on the palate with notes of citrus and vanilla.

ON THE PALATE:
The mouth is frank, delicate and complex, offering minerral notes, aromas of green apple, citrus fruits, fresh pineapple, combined with floral notes and summer honey. A champagne that offers finesse, complexity and precision.

FOOD MATCHES:
Can be enjoyed as an aperitif or all over the meal. It's an ideal pairing with sea or freshwater fish (Jon Dory, sea-bream, pickeperch etc.) and small game birds or white meat. Fresh or slightly matured goat's cheese is also and ideal accompaniment with this vintage.

Vintage 2004

A great example of how large yields do not necessarily mean poor quality in Champagne. As a reaction to the previous year's low yields, the vines produced one of the largest crops on record. The growing season proceeded without major difficulties but the bumper crop called for bud thinning. August brought about cooler weather and some rains, increasing the risk of rot. The massive crop, averaging 13,990 kg/ha, was picked from September 18th onwards. The quality was a pleasant surprise; vibrant wines with appropriate intensity, refined charm and refreshing lightness. This vintage impresses me more and more, and I feel tempted to give it the full five stars. It comes with a rare balance of freshness, lightness, yet fine aromatic intensity. Post-release, this vintage has proven to be slow to age, and elegant wines are likely to keep on ageing gracefully. Dom Pérignon and Louis Roederer Cristal both excelled.
