The Story

This Champagne is produced from a one-hectare parcel owned by Salon: "Salon’s garden", and from 19 other smaller parcels in Mesnil-sur-Oger, chosen by Aimé Salon at the beginning of the century. The wines are cellared in the bottle for an average of 10 years, gaining in complexity and finesse.

The proof that memory and history are important is shown by the bottles in the cellars from nearly all the vintages that have ever been produced at Salon. Headed by Aimé Salon until his death in 1943, the house was then left to his nephew. In 1988, Champagne Laurent-Perrier, a family-owned company, became the majority shareholder of Champagne Salon.

Made from 100% Chardonnay from the Côte des Blancs grand cru vineyard, Le Mesnil-sur- Oger. The densely planted vines are located on the mid-slope in chalky soil, and the Cordon de Royat method of trellising is used, which allows access to the soil at the base of the vines.

The grapes are picked and sorted by hand. Only the first pressing, or cuvée, is used. This is the lightest, freshest juice, containing the highest percentage of acidity, which is essential to the evolution and vivacity of the Champagne. The first fermentation takes place in a stainless steel tank. The wine receives no oak exposure and does not undergo malolactic fermentation.

The wine is cellared in the bottle for an average of 10 years, gaining in complexity and finesse. Riddling is done by hand. All bottles are disgorged within 8 months of the first disgorgement, also by hand.

Wine Information

1969 / Frequent violent summer storms, with hail affecting significant areas in a number of vineyards - close to 900 hectares were completely destroyed. Harvesting began in the dry and sunny weather of 1st October and lasted fifteen days. The harvest was healthier than in the two previous years. Very good quality.

We started with a perfect bottle of 1969 Salon.  It had great citrus, white ice, soda water and cream aromas.  It was so dense with zippy, tangy yellow fruit flavors and long, long acid.  Colorado John admired its ‘fantastic flavors,’ and I thought it was (better than) outstanding stuff as well (98).

Mature bottles of Salon are getting more and more scarce. For this beautiful individual I traveled to Canada to share the experience with likeminded champagne aficionados a few years back. We were lucky. Powerful but soft and round, deep notes of honey, roasted hazelnuts and sweet toastiness. This time we almost caught the beast at its peak, we were just a little too late!”

Clear, golden colour and no bubbles. Reserved, moderately strong nose with dried apple aromas. Crisp and dry, yet concentrated mouthfeel with fresh fruitiness. Delicate structure and lingering long finish with citrus flavours. The wine has passed its peak, but is retiring respectfully.

TASTINGNOTE Färgen var ljus och lysande klar. Trädgårdens alla blommor fanns närvarande i den nästan narkotiskt förförande bouqueten. De rostade tonerna finns redan där, men är nedtonade. Smaken är en fräsch och livsbejakande upplevelse. Ett ekvilibristiskt mästerstycke i den högre skolan. Årgångsbetyg: 4 av 5 poäng. Efter många problem under året bärgades en liten skörd med syrliga druvor som till en början gav skarpa, enkla viner. Idag har de bästa nått en riktig storhet och oöverträffad elegans. Salon, Comtes de Champagne och Jacquesson är favoriterna. Kommentar från provningen: Ett storslaget vin i grunden som just börjat sin resa nedåt. Rund och karamelliserat rik och fylld av kantareller, tryffel och hönsfond. Jag gillar den ännu bättre i yngre stilrenare form. Enligt uppgift från huset existerar det endast två flaskor i Salons källare av denna vackra årgång. Rangordning i provningen: 3:a av 19.

Inside Information

Champagne Salon is a small and legendary producer of vintage Champagne. Champagne Salon has always been highly collectible. For decades at the height of Paris’ prestige as the cultural capital of Europe and most of the rest of the world, Salon was the house Champagne at Maxim’s, the famous restaurant and bar. Grapes for the Grand Cru Champagne, which is always 100% chardonnay, come from the commune of Le Mesnil-sur-Oger in the Champagne region of France. Champagne Salon is only produced in years considered outstanding enough for a vintage Champagne, which in practice means that the domain produces about four vintages per decade, making the Champagne exceedingly hard to acquire. The domaine was founded in the early 20th century by Eugene Aime Salon, whose goal was to produce a Chardonnay-only Champagne using grapes from Le Mesnil-sur-Oger vineyards. The first commercial vintage was in 1921. Today Champagne Salon is owned by Laurent-Perrier, which has continued the practice of producing the Champagne only in exceptional years. Since its founding, there have been fewer than 40 vintages produced.
