History

After more than three centuries of passing down the Champagne method from father to son, and then to daughter, I have undertaken, along with my husband David, the work of my ancestors, above all that of my father, Jean Vesselle, without forgetting my mum too. We strive each day to honour their trust in us, by dedicating ourselves with passion to the quality of our product. Récoltant manipulant, in both spirit and practice, we endeavour to make wines with character.

Our uniqueness: to be careful in blending the characteristics of each area of land in the best way possible, by combining Power, Elegance and Finesse. Always attentive to Mother Nature, and new technology, today our Champagne House demonstrates a profound respect for the environment through:

Vineyards

Our vineyard is made up of 15 hectares in three prestigious locations: Bouzy, a very well known wine-making area, classified as a 100% Grand Cru; the nearby land surrounding Bouzy; Loches sur Ource, a Barséquanais village near Riceys, which is well known for its rosé. Our land is therefore in the best area for Pinot Noir! This is why our vineyards are made up of 90% Pinot Noir and only 10% Chardonnay.

The management of our vineyards is scrupulous and our day to day running is careful. We attach a great importance to the environment and therefore respect it as much as possible by using natural defences of the vines, thus limiting chemical treatments. Since 2000, we have been using environmentally friendly processes such as tillage and enherbement (letting grass grow between the vines) which prevent the need for weeds killers.

Our main objective is to use renewable sources of energy and therefore, during our renovation in 2007 we installed solar panels and a rainwater harvesting system. The entire harvest is vinified, managed and marketed by us in Bouzy. This enables us to reach an annual production of around 120 000 bottles from all our cuvées.

Winemaking

The vinification is a fundamental stage because it ensures the constancy and the quality of our wines. In 2007 we invested in our Champagne house, renovating and modernising it with a qualitative approach, whilst continuing to respect the environment. All of our grapes must be hand picked, as is the law in the Champagne region. They are then transported directly to our Champagne house where they are pressed in two pneumatic presses.

 

Following a meticulous débourbage (the settling of the sediment in the juice), the fermentation takes place calmly, thanks to thermo-regulated vats. We blend the wine ourselves with the advice of our oenologist, respecting both the character of the year’s harvest and the particular qualities of the different cuvées.

The bottling takes place in early February. After this, the bottles remain in the cellar for the second fermentation, the birth of the Champagne! The maturing is staggered between 2 and 10 years according to our different cuvées, and the disgorgement is the last stage in the process before the selling of our Champagne. Each of the cuvées in our range can be appreciated at any moment, from apéritif to dessert, or at any occasion you desire: rich, intense and varied, each quality reflects an exceptional personality for lovers of the extraordinary.
