WINEMAKING

The quality of this wine begins in the vineyard, where sitting on fine silty clay that dries early in summer forces the goodness into the fruit. Yields are low but the quality is wonderful. Due to the cooling influence of the Adelaide Hills, this block is usually one of the last to be harvested allowing time for the fruit flavours and tannins to develop gradually. Grapes are then gently crushed and fermented spending two months on lees for optimum extraction of tannins and colour. Following fermentation the wine is softly pressed into French and American oak where it undergoes maturation for up to 18 months. Following maturation the wine is blended and prepared for bottling.

WINEMAKER

Chris Dix/ Heintje Lange
