Dosage liquor matured in oak casks (over 15 years).

Pinot noir 90 %
Chardonnay 7 %
Pinot Meunier 3 %

VINIFICATION :

The juice comes exclusively from the first press. The base rape has flowed naturally thanks to gravity, with no pumping. We specially value this technique for the elaboration of our Champagnes. It allows to use very low quantities of sulfites (three times under standard vinification). This very « natural » vinification, and the rare quality oak casks we use for part of the wines gives to our pinots a very beautiful copper-coloured aspect, close to last century's tradition.

Medium gold with bronze tinges, few small bubbles in the glass.
Shy at first but then revealing some very elegant touches of coffee and Brazil nut but also nuances of lime.
Delicate on the palate, just lightly creamy with hints of tangerine and a very long white truffle aftertaste.
This is a very complex cuvée that will continue to develop.  However, drinking now is a real delight.

Vintage 1996

Up to this point 1996 has been considered a fantastic vintage which produced classic wines; the best since 1990. A long, dry summer produced grapes of record ripeness with record acidity. Some, including myself, question how the 1996s are aging. The wines are generally characterized by a distinctive rather lemony acidity and very good attack, but some wines now seem terribly austere, while others already seem dangerously short of fruit. None of the subsequent vintages are quite as distinctive as 1996, which in the more successful cases should almost certainly be drunk after the 1999s.

Provades på magnum. Dégorgerad? TASTINGNOTE Tjoho vilda västern! Knallpulver! Hasselnötsskal. Stor komplexitet. Mjölkchoklad, alla äpplen och cirustonerna. Stor grillad, brödig och rökig med en nötchokladgrund som förför. Om 1996:orna: enda årgången som vi ser att magnum utvecklas långsammast. Idag dricker man absolut inte 1996 i vanlig flaska men i magnum just nu är den så njutbar. Brukar ta cirka 25 år innan man brukar se skillnaden. Liknar Pol Roger och La Grand Dame 1996 på magnum. En lång, torr och mycket solig sommar gav druvor med synnerligen god koncentration av socker och fruktsyra.1996 är en riktig monsterårgång och det i sig är väl ingen nyhet. Man brukar ju säga att alla kan göra bra vin under stora årgångar men om vädret är för extremt behövs det skickligt vinmakande också för att tackla alla ovanliga fenomen.
