The Story

The story of cuvee Jules Bonnet began in 1988 when Thierry Bonnet decided to pay homage to his great grand father Jules Bonnet. He started by buying a dozen oak barrels and producing his first champagne vinified under oak just as Jules did a hundred years before him.

The selection of grapes for Jules Bonnet is very precise and made only from our best pinot noir parcels in Verzenay (pure chalk soil, Grand Cru) and Chamery (clayey and calcareous soil, Premier Cru). To reach the Jules Bonnet quality level we need a balance between the sugar rate, the acidity and perfect health of the grapes. This is why this cuvee is only made in the best vintage years.

At the end of the fermentation the wine stays in the oak barrel for a maturation time of eight months. Then, it’s bottled without finny and filtration to preserve all it’s beautiful potential. After five years of aging in the cellar, the bottles are disgorged and given an extra brut dosage.

 

Visual Aspect: a golden yellow color with greenish tinges

Nose: charming and smooth, its powerful, expressive bouquet releases scents of white fruits mixed with dried fruits and exotic notes (pineapple).

Palate: highly vinous, Jules Bonnet gives a particularly sweet and fleshy pinot noir character. After a sharp onset, the middle palate expresses beautiful apple tart flavors, vanilla and yellow fruits (apricot). A beautiful length, leaving an impression of volume and fullness.

Match with food: this gastronomy champagne is appreciated during the meal, giving elevation to a roasted turkey or chicken with morels.

Vintage 2006

A cold winter and springtime frosts laid the foundations for this vintage of abundant yields (12,997 kg/ha). Uneventful flowering was followed by exceptionally hot and sunny weather, which lasted until August. A dank August left producers fearful but fortunately warm, bright conditions in September redressed the balance. Harvest commenced on September 9th, producing grapes high in sugar level but notably low on acidity. The general health of the grapes was sufficient, producing wines which excel over the preceding 2005 vintage, another warm and ample year. The year's greatest wines are supple and expressive and despite the richness they escape being overly heavy. Overt and welcoming upon launch, the best come with excellent capacity for ageing. Winey, and richly fruity characters, most Champagnes regrettably miss some tension and finesse. Wines of the vintage include Taittinger Comtes de Champagne, Krug Vintage and Dom Pérignon Rosé.
