100% Chardonnay


Vinification:

The Chardonnay have been harvested the September 6, and the Chardonnay the September 13 into small 12kg boxes.
About 10% of the Chardonnay macerated one night on the skins before fermentation, and then all of this must was fermented in barriques, as was all, of the pinot grigio. The remaining chardonnay grapes were gently pressed, and the chilled must went to stainless steel tanks for fermentation.


Maturation:

When the wine fermented in barrel completed its malolactic fermentation, it began its maturation,without being racked, spending about 7 months sur lie, with weekly bâtonnage to keep the fine lees in suspension. In April, the final blend was assembled, and on May 17 the wine was bottled into:
2,370 half-size Bordeaux bottles
20,790 standard Bordeaux bottles


Vineyard profile:

The white wine grapes traditionally grown in Chianti Classico, Trebbiano toscano and Malvasia lunga del Chianti, find their best expression when produced as a Vinsanto, but Ama’s largely limestone soils and hillside elevations offer better opportunities for the production of a great white wine. In 1978, a 1.44-hectare block of pinot grigio was planted in the Bellavista vineyard, and in 1982-83 clones of Chardonnay from Burgundy were field-grafted in several other blocks.
Finally, in 1984, in the area known as Al Poggio, we decided to increase the area dedicated to chardonnay, planting there another 4 hectares; with the aim of producing a grea t wine, we trained the vines to the open lyre system. The first vintage produced was 1988. In 2008, we began replanting outdated vineyard blocks, and the winery currently has 2.1 hectares of pinot Grigio and 5.5 of chardonnay.
