Château Haut-Bailly has a distinctive style that harmoniously combines classicism with modernity, elegance, finesse and softness with structure. Château Haut-Bailly has great ageing potential and consistently wins praise from experts who agree that it offers complex pleasure and a richness that is neither aggressive nor ostentatious. These are natural qualities which Haut-Bailly is determined to keep.
Each year the team at Château Haut-Bailly works hard at developing the quality of the wines without interfering with nature. Since 1998, thanks to even more stringent selection controls, the wine has gained a greater depth and precision.

Vintage 2000

2000 had the potential to be a year which surpasses all others; and our hopes and expectations were not disappointed. The wine boasts an air of strength and concentration, a very intense colour, a fruit of exceptional maturity and, as always at Haut-Bailly, intricacy and harmony, which for us is the very definition of a great wine. This vintage blessed from on high would benefit from several years ageing so as to reach its customary smoothness, but do not be afraid to taste it before-hand if temptation calls!

 

Thanks to the clemency of the weather – temperatures were 2°C above average, with 9 very hot days, a key factor in the grapes’s development ripening occured in the best possible conditions. The grapes of 2000 were typified by thick skins and commendable levels of concentation. The harvest started at Haut-Bailly with a plot of young merlot on September 13, yet it was not until October 3 before picking the cabernet commenced ; troughout this period mother nature smiled upon us, bathing the vineyeards in the sun’s warm rays.

Written Notes

The harvest started at Haut-Bailly on 13 September, with a plot of young Merlot. Picking the Cabernet commenced on 3 October and was finished on 11 October. The yield was 49hl/ha, with only 50% of the crop ending up in the grand vin.

Noticeably deeper in colour than the 2001. Quite closed, but some sexy aromas of chocolate and truffles already apparent. More savoury on the palate, its goût de terroir more apparent here than on the nose. Very silky tannins, with a fleshy and lush texture in the mouth. already drinkable, and very sexy and modern by Haut-Bailly’s standards. Drink now to 2020+? 93

2000 Haut-Bailly Open, intense and developed nose with beef stock, cabbage, led pencil, gravel dust and leather of a decadent, slightly degenerated plummy fruit. Excellent nose that gets more complex in the glass with sweet spices and dried herbs. Full and fruity attack with maturing dark plums and sweet dark cherries, cassis, black truffle and mint. Big but velvety smooth, mature tannins and a long balanced finish. Will keep but in top form today! Drink now-2028 95p
