    Fennel-Scented Duck Breasts with Pinot Noir Sauce

The Story

The 47 hectares which surround the Château, the heart of the estate, are called "l'Enclos". Only the grapes from these 47 ha make the "Grand Vin de Château Latour". The vines in this vineyard are very old, some of them being centenarian. This "Enclos" benefits from a very unique terroir that combines an optimized sub-soil nutrition for the vines, the Gironde river which tempers extreme weather conditions, and a typical Médoc climate, largely influenced by the Atlantic ocean, which allows the grapes to reach maturation under favourable conditions.

Herbal, green and paprika, leather, vanilla, prunes, mint, now so complex it's hard to describe, anise, even leafy touch and cigars and cedar on top of the above. Perfect balance, fresh acidity, after five hours all the green notes are gone and the length is never ending. The best 88 Bordeaux I've tasted! 95

Deep dark colour, slightly fading rim, powerful dense deep nose, classic cedar and cassis, little ironstone and earthy maturity. Palate big and solid, slightly hard fruit and tannin, very young still not forgiving, not sure if hard tannins will soften before fruits drops, hard metallic aftertaste. Needs time

Deep, Purple colour. Intense, ripe black fruit nose with ashes and black currants. Medium-bodied, silky tannins, vivid acidity low fruit intensity but elegant style. Long intense yetrestrained finish. Lackung fruit, but very focused savory palate. Decant for 2 hours. Ready but will improve in next 10-15 years.

"Ruby with thin brick rim. Great of tobacco, a bit tender first, leather, coffee, cigars, cedar, cassis. Extreme balance, great and fresh acidity, mature and elegant tannins, very young, such elegance and complexity, long length. Keep another 5 to 10 years, no hurry. "
