Vinification
2013 was a more challenging vintage for us as the quality was more heterogeneous. We had to be strict with the selection and work the fine lees a bit longer to extract more potential. We also work with must denser than usual to promote a better mouth-feel.
Maceration lasted 2 days. Fermentation took placein tanks under controlled temperature at 18ºC for one week.
We found that we had a good acidity but less aromatic concentration, we overcome this by strict selection at the winery and extending the lees contact to over 6 months.
