The Story

Ocean Eight is in the cool Mornington Peninsula, a short drive south of Melbourne. Owned and operated by the Aylward family after their successes with nearby Kooyong Estate, Ocean Eight is focused on Burgundian varieties and influenced by Burgundian techniques 

Chardonnay is sourced from the Estate owned and tended vineyard. Picked on the ‘edge’ of ripeness with great acid structure and some hints of botrytis. Cropped to 1.32 tonnes to the hectare,

The Winemaking

Wine is fermented cold over 4 to 6 weeks to maximise aromatics. Fruit is pressed and gravity fed to underground barrel room into old oak (6+ years), where it spends 12 months on full solids. The aim is to maintain excellent natural acidity whilst showing elegant texture.

The Juice

Lifted nose showing an array of citrus with lime peel, lemon oil and grapefruit. Some flint, matchstick coming through.

Palate is one of purity and freshness with citrus notes, light honey dew and schist mineral. Fierce but balanced acid carries the wine through with great length.

Written Notes

This wine was originally made with no malo but in recent years, that has increased to 50%. Old barrels are still the go. This is a delightful, lean, citrussy Chardy, much more Chablis-like than some of the richer styles. There is a hint of melon but the citrus notes dominate. Good concentration and length. A fine example of the modern style of chardonnay.
