The Story

Location

The Pascal Jolivet Domaine covers 49.50 acres in Sancerre, with vineyards close to the villages of Bué, Verdigny and St Gemmme. 8.60 acres are planted with Pinot Noir.

Vinification

The Pascal Jolivet Rose is a blend of direct press and ‘saignée’ production method rosé wine. The juice is produced from macerated Pinot Noir grapes that have not been sorted by hand or de-stemmed. The philosophy of the estate is to let nature take its course as much as possible. The juice is fermented naturally, without adding cultivated yeasts in conjunction with thermoregulation.

 

Character

This Sancerre rosé develop aromas of red fruits, full of elegance and subtlety.

 

Food & Wine Match

With its soft fruity flavours, it is very pleasant as an aperitif, but also as an accompaniment with pork dishes and poultry.
