The Story

Bin 707 represents the Penfolds House red wine style at its most rich and powerful. The cabernet fruit is largely drawn from South Australian vineyards in Coonawarra, Padthaway, Barossa Valley – including the famed Block 42 vineyard - and increasingly from Bordertown. Everything about Bin 707 is large scale. Winemakers seek fully ripe fruit with strong flavours derived from partial barrel fermentation and maturation in new American oak hogsheads for a period of 18 months. Bin 707 is immensely concentrated with dark berry/dark chocolate fruit balanced by well-seasoned new oak, plenty of fruit sweetness and strong but not overwhelming tannins. Bin 707 builds up into a wonderfully complex and interesting wine. The 1970-1975, 1981,1995 and 2000 vintages were not made.

Written Notes

17 months in new American hogsheads, this Cabernet is from the Barossa (including fruit from the legendary Block 42), Padthaway and Port Lincoln. If you are seeking an Aussie Cabernet to stand the test of time, there are not many better choices than Bin 707. The power in this wine is immediately apparent. Black fruits, florals, spices, dark chocolate, dry herbs and hints of bitumen. Terrific length of flavour here and the intensity is maintained throughout. A stunner.

Nothing if not ‘complex’! At rst it certainly doesn’t shout Cabernet-teriyaki, Japanese sauces (beef and sweeter mushroom stock), nori. Sea-spray/shale/seaweed/iodine to the fore. But if in doubt delve closer – trademark Block 42 Cabernet pungency coupled with passata (tomato) aromatics ascend to sign-off on a 100% varietally pure pedigree.
Barely perceptible oak (but 100% new!) aligns with scents of boardroom worn-leather to convey this wine’s many non-fruit derived credentials.
All the above coalesce with an odd transient waft that surely must come from a bakery/patisserie – freshly baked vanilla sponge in particular. No? Really?!

Saturated dark fruits – blackberry and blackcurrant with ourishes of aniseed and black bean. A clearly demarcated oak core – radiating structural and avour appendages that afford impressive palate weight
and depth.
Localised (top of mouth) peripheral/fringe tannins in cohorts with a balanced acidity deliver to palate length expectation.

‘Made to measure’ layers of unadulterated Cabernet avours, a noticeable grip, and a deceptively complex mouthfeel, construe to tick any remaining boxes.
Watch this space – an unnamed yet learned source has already suggested that this vintage could be a
Bin 707 sleeper? Word’s out...
