The blend is 94% Cabernet Sauvignon, 4% Malbec and 2% Cabernet Franc.
The Vintage 2011 was an excellent warm vintage in Wilyabrup, with plentiful rainfall after flowering and dry warm weather all summer. 2011 ranks with 2007 as one of the warmest and earliest Margaret River harvests, producing very polished and luscious wines. Warmer vintages suit the late ripening Cabernet Sauvignon– particularly the Cabernet planted on our south-facing slope. These four small plots receive the greatest number of sunlight hours on our vineyard, but the east-west orientation of the vines ensures a slow fruit maturation. These are the last batches we harvest each year. In 2011 our Cabernet Sauvignon was harvested between the 17th and 19th of March, yielding 4.9 tonnes per hectare (or 2 tonnes per acre, or 34 hectolitres per hectare). The 2011 vintage was our first Cabernet Sauvignon to be made using our sorting table. Although this wine is hand picked, there are still many vegetal items to be removed – such as the remainders of stems and green berries. The table guards against over ripe characters.
The WinemakingThis wine fermented in small closed fermenters, and pumped over four times a day. Following fermentation, the new wine remained on skins for 28 days before being pressed. Afterwards, the wine was transferred into new French barrels where they matured for 21 months.
The Wine is a blend of 94% Cabernet Sauvignon, 4% Malbec and 2% Cabernet Franc. The colour is a bright crimson. The nose displays a hedonistic mix of brooding blue fruits, five spice and toasty barrel notes. The palate is fine, succulent and mouth filling, with waves of dense red fruits and a very long silky finish. It captures the warmth of the vintage in the glass.This wine is generous enough to have a broader drinking window than recent vintages. Best enjoyed between 2018 to 2040.
