The Story

The Grand Cru Chevalier Montrachet sits high on the hillside overlooking Le Montrachet, Bâtard Montrachet and the village of Puligny Montrachet far below. 

As a leader of biodynamic viticulture, Domaine Leflaive is renowned for the attention to detail and care that goes in to nourishing each vine from ground to bottle. This organic method of cultivation enriches the soil with plant-based compounds, thus sparing the vines of harmful herbicides and allowing the wine to exude the particularities of the Puligny-Montrachet terroir.

Their Grand Cru wines have consistently scored highly with Wine Advocate, Neal Martin describes them as “wines with audacity and ambition.” Le Montrachet, Batard Montrachet, Bienvenue Batard Montrachet and Chevalier Montrachet dominate Wine Advocate’s top scorers from this domaine, all of which are produced in tiny quantities. It is also worth noting that Neal Martin flags up Domaine Leflaive’s ability to “transcend the limitations of the growing season” – so even in less than favourable vintages their wines are worthy of consideration.

For those looking for an accessible opportunity to taste the top quality white Burgundy produced by this domaine, their Bourgogne Blanc and Mâcon Verzé provide just that.

Domaine Leflaive’s wines age excellently. Allen Meadows has previously noted that one particular vintage of Le Montrachet “even at almost 20 years of age… is still cruising along like it was only 10 as the freshness of the aromas is uncanny.” To help judge when the wines are ready to drink, Domaine Leflaive’s website provides an excellent database of recommendations by wine and by vintage.

Sol argilo-calcaire: 3 parcels in the Chevalier-Montrachet appellation.
Chevalier du bas sud: 6.5 ouvrées (0.69 acre) planted in 1957 and 1958.
Chevalier du bas nord: 21 ouvrées (2.22 acres) planted in 1955, 1964 and 1980.
Chevalier du haut: 19 ouvrées (2.01 acres) planted in 1974.
Surface: 1ha 99a (4.92 acres).

Method of culture: Long, gentle pneumatic pressing, decanting over 24 hours, then racking and running into cask of the must.
Alcoholic fermentation in oak casks, 25% new (maxi 1/3 Vosges, mini 2/3 Allier).
Maturing: after 12 months in cask, the wine is aged 6 months in tank where it is prepared for bottling.
Homeopathic fining and very light filtering if necessary.

Biodynamic: Manual harvesting with grape sorting and optimisation of choice of date through parcel-by-parcel ripeness monitoring.

2005 VINTAGE in Burgundy / Hopes made way for certainty.

2005 promises to produce outstanding whites, with elegance and opulence beyond the norm, and superb, seductive and well-structured red wines.

The richness of these wines perfectly expresses the diversity of the region. A wine of excellent quality is achieved above all through the ripeness and healthiness of the grapes. For this reason, thanks to the almost ideal climatic conditions, 2005 will an exceptional year. At the point of harvest, the chardonnay and pinot noir grapes (the two principal grape varieties in Burgundy) were magnificent and luscious. The chardonnay produced resplendent golden grapes, bursting with sugar and the pinot noir produced densely packed grapes of an intense colour, characteristic of all great vintages. Due to low rainfall and weak northerly winds, the grapes remained in a remarkable state and did not require any sorting.

Under a radiant sun, the harvest passed by peacefully, giving the wine-growers the opportunity to assess the optimal maturity in relation to the grape varieties and parcels. The sugar content in the grapes reached above satisfactory levels, in some cases close to outstanding, which is a good indication of maturity, and promises a good balance between the acidity and sugar levels found in the wines 

The red grapes' thick skin stored up large quantities of polyphenol (colour and tannin), a demonstration of their healthiness. Vinification took place in ideal circumstances. 

Mid-november 

The white wines, although still fermenting, already reveal an extraordinary richness and aromatic complexity with great finesse (notes of pear and peach with a hint of ripe grapefruits). On the palate, the wines are incredibly ample. The chewiness and acidity are in perfect harmony and enhance the elegance and freshness of the chardonnay.

The red wines possess deep and intense garnet-coloured robes. They exude intense aromas of fruit (blueberry, blackcurrants, cherries, wild strawberries) and variety of spices (pepper). On the palate, the fruit blends with the rounded elegance of the tannins and the light acidity, which all come together to ensure the length of the wine. The powerful and elegant structure of these wines is a sign of their good ageing potential. For the domaines, cooperatives and maisons of Burgundy, 2005 is without a doubt a vintage of exceptional quality which promises wonderful surprises for the consumer.

Domaine Leflaive Chevalier-Montrachet 2005 A lunch at Alto in Brizzy (usually deservedly chockers but on this day, sadly deserted as no one yet back into riverside restaurants after our floods but one is keen to help local businesses and if it means drinking wines like this, so be it) with some mates saw a few really nice wines hit the table. I was especially delighted when this emerged as they have been my all time fave white Burg producer for many, many years. There was possibly a dip in quality a while back but they are right on song these days, and for some time. I remember the '82 and '83 of this wine. Both monumental. And a good friend showed me a little trick (it is hard to do for several reasons as will become obvious). Drink half the glass and then put the rest aside for 3-4 hours (we decanted this bottle which helps perform a similar function). It is amazing how a superb white wine can become something truly mindboggling, with that time – I dread to think of the massive number of bottles that have gone to their graves without revealing their best. Ditto with any Montrachet you are lucky enough to find. It is hard to do as obviously, one wants to drink the thing, not have it sit there for hours. Also, one has to watch that a waiter doesn't top it up with something else (still remember a blend of Rousseau Clos St Jacques and Warre's vintage port – not half bad but neither as good as if they had remained separate) or even worse, take it away thinking you have finished. And before we get onto the wine itself, one thought. I know that Montrachet reigns supreme in the minds of white Burg lovers but for me, Leflaive’s Chevalier is the equivalent of almost anyone else's Montrachet (and be careful of those tricky spell check machines – tried to turn my Leflaive into a laxative). The wine itself. Truly stupendous. Unbelievably complex – you could eat it. Layered flavours of oatmeal, honey, peaches, cream, matchstick, a little wet stone and much more. Finely balanced but what was astonishing was the incredible length of the finish. Taste it for days. And not only that, the wine retained amazing intensity throughout. A little more age might just nudge it up a point. 99

Full yellow with a gold tinge. Very ripe aromas of dried yellow stone fruits, pineapple and chalky minerality. Then round, silky and seamless, offering lovely integrated acidity but relying even more on its minerality for balance (Morandière described this wine as "a less extreme version of the 2015"). At once tactile and smooth but still backward, offering mouthfilling flavors of apricot, citrus fruits and acacia flower that gained in depth as the wine took on oxygen. A very rich style but without any easy sweetness, this wine may well enjoy a 30-year lifespan. (13.7% alcohol; 3.22 pH; the harvest began on September 16 but the Chevalier-Montrachet came in on the 20th after a few days with a north wind that concentrated sugars and acids; still, this was a drought year with a blockage of maturity, according to Brice de la Morandière)

Broad, suave, and silky-textured, this is a medium-bodied wine with considerable depth and length. Its flavor profile, dominated by spicy minerals as well as pears, is engaging and expressive.

Served blind. Towards lemon yellow. Minerals, flint, butter, lemons, elegant nose, lovely. Fresh acidity, elegant, fresh, some nuts, lemons, quite intense and fairly nuanced, detailed and long. I was on 2004 Leflaive Bienvenues. 95

1. Start by Signing up and creating your profile

- Add a profile picture and more information about yourselves


2. Next, Create your personal Wine World

- Click iFollow (Discover) from the top menu

- Tastingbook has added automatically into your wine world 5-10 of the most active professionals or Pro's as we call them.

- Search for more pros or other users by typing their name in the search field. Then click into my world to those who you want to include in your wine world. This way, you may be notified when they taste wines or comment on them.

- You can also add wines and wine producers into your wine world. This allows you to access the most up-to-date information about them.


3. Invite your friends to join the tastingbook

- Click your username on the top menu and choose invite

- Type your friends email addresses and click send invites

- You can follow the status of your invitation on the same page


4. Create a tasting and do tasting notes

4.1. Click the New tasting button from the top menu.

- Name the tasting as you wish.

- Set the place and time (You can also add your past tasting notes by just changing the date)

- Click the add new wine button on the right to add new wines to the tasting.

- Now go to the box that says 'Click to add the wine'.

- Start by typing the wine or producer name and select the wine from the list that appears.

- After you have selected the wine, the vintage selection will be opened automatically

- Select the correct vintage by clicking on it.


4.2. Next, click My tasting note box and the worlds most advanced tasting

- From the bottom left of the tasting tool you can select in which language you want to use and view tasting notes.

- just do your wine note by clicking the correct adjectives. The adjectives can be activated by clicking once, or de-activated by clicking again.

- Tastingbook Pros will teach you while you taste wines.

At the bottom of the page in the section Show notes of, you may view notes of the professionals by clicking Pro's. If any of the tastingbook pros have tasted the wine before their opinion will show in the gold colored frames around the adjectives on the tasting view.


4.3. After you have completed your wine note, it's time to give Tb points.

Click the box on the bottom right Give points.
In case you want to add any comment or personal thoughts related to this wine, you may tick the note box next to the scores. In this field you may add copy-pasted texts for instance your old notes, etc.


4.4. After you've completed your notes for all the wines, click Close tasting.

You may now share some general thoughts about the tasting or tasted wines and choose with whom you want share your tasting. Set the Tasting privacy to limit the audience who are able to view your tastings information. We suggest you use Everyone as most of the wine experiences are meant to be shared.

Note:

If a wine that you are tasting is not found in our database, please be kind enough to send us an email to: addwine@thetastingbook.com, please include at least the wine name and producer. We will add the wine in tastingbook within 24 hours.


5. Tastingbook is full of information and stories - how to find them.

Tastingbook is full of information about wines, vintages, and wineries and also has over 30.000 pictures of wines. To best way to find what you are looking for is to browse the site from the Browse field in the top right corner.

You may search for wine, vintage, producer, pros or other community members by typing the name in the browse field. You may then choose from the drop down menu.
