Wine Description
The Story
Presentation of the Cuvée
This champagne is produced in very small quantities. As light as the foam of waves, it always constitutes a quite pure and rare composition. Its dosage being very light, it is very close to the "natural" taste of Champagne wines. It is made up with rich years to reach a good balance between acidity and fruitiness.
A long-ageing of this wine after the disgorging process helps to the blooming of its aromas and a nice development of its gustative harmony and equilibrium.
Tasting Notes
The nose opens on fruity and complex aromas evoking fresh grapes as well as white flowers with light notes of licorice. Remarkable balance and persistency in the mouth, a real sensation of purity.
Food Pairing
A wine of finesse and fraicheur: the perfect friend for the aperitif.
It also goes perfectly well with iodized dishes (Fresh oysters or cooked ones, any fine white flesh fish) or sushi. It beautifully pairs with a wide and rich range of flavors: cold starters such as a terrine of small spring vegetables, any white meat (poultry, sweetbreads), any Thai or Indian dishes. .
