Wine Description
The Story
With a light dosage, this airy champagne reveals its pure and subtle character, revealing the true nature of blending. Nicely mineral, it releases flowery and fruity notes in a light effervescence. An ideal partner for exceptional aperitifs, it perfectly matches with iodized dishes reminiscent of seaside holidays like seafood, sushis or flat oysters from Britany.
The Champagnes classification follows very specific criteria for sugar dosage. In contrast to the sweet extremes, the "Extra-Brut" dosage allows the Champagne to express a wild and pure side, engaging with an unvarnished complexity, acquired during the long years of maturation in cellar, before disgorgement. The true nature of the assembly resurfaced then, throbbing again with freshness, when the cap jumps and releases its bubbles in a sharp rustling.
Notes:
Tinted with pale gold and silver hues, the dress is brilliant, dotted with a multitude fine and light bubbles.
The nose is pure and complex, playing on floral notes (acacia, nutty bug) mixed with fruity notes (stone fruits, Mirabelle, white peach) delicate. The attack on the palate is voluntary, nervous and racy: the discretion of the nose leaves room a wild minerality, barely tamed by a complex fruity fragrance. The finish is subtle, tense and persistent. Pure and complex.
Acacia and bug hazelnut. Fruits to nuclei. Pale gold and reflections money. Brilliant. Fine bubbles and light. Voluntary attack and racy. minerality wild. Final subtle and persistent.
Food match: Ideal partner of appetizers, it goes wonderfully with iodized dishes (sushi, crustaceans etc).

About this cuvée
Extra-Brut cuvees permit the wine to show its « brut force » and purity. Here we can experience the true nature of the blend: its savour and freshness are revealed as soon as the cork is popped.
