The WINE ESTATE of the former cistercian abbey!

900 Years of viniculture The wine estate of the Eberbach Monastery, the latter of which was founded in 1136 by St. Bernhard of Clairvaux (Burgundy) has, through its tireless pursuit of quality, made wine history. This centuries-old tradition has led the Eberbach Monastery to become the largest German estate, a tradition carried on after the monastery‘s secularization in 1803 through the Dukes of Nassau, then beginning in 1866 as Royal Domain by the state of Prussia and since 1945 by the Federal State of Hesse as proprietor of the wine estate.

The Eberbach monks also led the way in the production and classification of their top wines from the best vineyards. Already at the beginning of the 18th century the monks established a „cabinet wine cellar“ („Cabinetkeller“) in their monastery in which the noblest wines gently matured. These wines served constantly as the most valuable wines of their time. Following this historical tradition our most precious wines are carefully manufactu- red in our cabinet wine cellars. For over three hundred years the indicator „aus dem Cabinetkeller“ („from the cabinet wine cellar“) has guaranteed wines with a distinctive quality standard.

The Eberbach Monastery is not only the most valuable wine estate in Germany, it is also the German wine estate having the most steep slopes (70 hectares with a gradient of more than 35 %).It was recognized early at the Eberbach Monastery that special wines grow on the steep slopes in the Rheingau. This consideration shaped the cultural landscape in a special way in the past and still does so today.

Whereas former vineyard parcels in the area of the Mittelrhein now lie fallow, the wine estate of the Eberbach Monastery has stood fast in its commitment to the cultivation of these labor- and cost-intensive vineyards. The work on these steep slopes (e. g. our vineyard sites in the Assmannshäuser Höllenberg, Rauenthaler Baiken or Rüdesheimer Berg Schlossberg) presents us with special challenges. Because of the gradient only a limited use of machines is possible. The great amount of handwork – above all in the hot summer months – is especially difficult, even when often combined with a breathtaking view.

Wine with a historic quality standard

Hence, Kloster Eberbach has for centuries practiced a classification model which was adopted by the Verband Deutscher Prädikatsweingüter (Prädikat Wine Estates) and which, is utilized by all top German estates.

The range of products of our estate is structured according to this historical concept as follows:

ESTATE BOTTLING FROM OUR CABINET WINE CELLAR

• Cabinet Wine Cellar of the Eberbach Monastery since the 18th century

• These wines consistently ranked among the most valuable of their time.

• The grapes come from the most valuable parcels of land in our best locations.

• They are selectively harvested by hand and are limited to a maximum yield of 50 hectoliters per hectare.

• Following the harvest, a careful fermentation into dry as well as noble sweet wines of top quality takes place in the Cabinet Wine Cellar of our domains.
