2007 was our second year with the Blueline vineyard.  A warmer vintage for us, we moved to open up the trellis systems to provide greater shade with a looser canopy.  Fortunately the Cabernet vines that were planted in 2001 had reasonably mature root systems by that point and weathered the heat spells relatively well with the opened up canopies.  With excessively drained gravel soils, little air humidity and a warmer season, watering was a necessity.  Though we watered a little more than we would in a cooler vintage, we are always watching the plants to maintain that razor thin balance of stress to plant health, and watered only to counter the whims of mother nature through the heat spikes.

The Cabernet was harvest in two blocks (clone 4 and clone 337), one in late October and one in early November.  The two blocks were vinified separately and blended just before bottling.  23 months in barrel with about 30% of the barrels being new French oak.  Bob Foley is the winemaker extraordinaire!

The Story

Winemaking Philosophy
Hourglass has always been heavily influenced by a sense of place, what the French deem terroir. As we have expanded to encompass two dramatic vineyards (the original Hourglass Vineyard & the new Blueline Vineyard), our objective remains the same - to craft highly expressive wines reflective of their unique sense of place. But it is more than just a sense of place. It is the human interaction with that place that makes wine unique and special. Vines do not simply grow themselves into amazing wines. They must be coached and encouraged along the way by ever talented people such as our winemaking team of Tony Biagi and Efren DeHaro, and the vineyard management of people like Kelly Maher and Josh Clark, whose collective wisdom has a dramatic affect on the outcome on what you experience.

The convergence of soil, weather, geography and the human hand are what you taste every time you pull the cork from one of our wines. Part splendor of nature, part art, part science, wine is a complex web of relationships that yield the final result. Change the web and you change the profile. But what exactly does all this mean and how does human interaction work in concert in this dance with mother nature? What does that yield in our wines?

Working backward from the table where an open bottle first reveals itself, we seek to deliver a unique experience. Aromatically, any bottle of Hourglass must intoxicate and beguile. It must arouse your senses and draw you in. Aroma is a signature and a critical one at that. Whether it is the dark sour cherry and Mandarin of our Merlot, the floral violets and rose petals of Cab Franc, the earthy, minty, cassis and black licorice of Cabernet, the game and spice of Petit Verdot, or the high toned citrus notes of Malbec, all our wines are punctuated by dramatic aromas. This is both mother nature’s gift of rocky mineral rich soils as much as it is a concerted effort to manage the vines to deliver smaller berries (yielding higher skin to juice ratios and elevating flavor and aromatic concentration), the decisions regarding optimal ripeness, the thought process governing fermentation protocols, the nature of what barrels to use, how long to age, etc.

On the palate, a young Hourglass wine must jump and sing, an older wine must tease and intrigue. In either case, all things must be in their right place with the right dimension - balance, balance, balance. Explosive fruit must be framed, layered with earthy dimensions and polished textures, to create a seamless integration start to finish.

This is the art of winemaking and why Tony Biagi is so well suited to it. In our opinion he is one of the most balanced left brain / right brain individuals we have ever happened upon. His personality influences his decisions, which in turn flow through his wines. It is no accident that the younger wines exhibit explosive fruit driven flavors yet are balanced against the framework of acidic structure making them both intense and light on their feet at the same time. The grip of tannin is there, but polished on the edges for a silky texture, the result of patience in the field to allow seed and skin maturation to arrive at that perfect moment. We make no quarrel with modestly “higher alcohol” wines, as they are relative to deeper phenolic concentration and explosion of flavor and aromatics, yet this must be balanced against good natural acidity. Oak must be judiciously considered so as not to tread too heavily on the nuances of the vineyard. As it is with each decision, careful consideration is paid to balancing the web of complex relationships.

All of this sums to wines with beckoning aromas, a concentrated fruit core, structured and defined framework, depth of flavor, silky texture and an enduring finish, all in seamless balance. We are fortunate to have two very special vineyards uniquely suited to yield wines of this dynamic and a winemaking team experienced in walking the razors edge in their pursuit of balancing the complex relationships between mother nature, vineyard and winery. .

Wine Information

”THE BEST NAPA CABERNET 2007” – HOURGLASS BLUELINE VINEYARD
Hourglass Blueline Vineyard pulled out from the extensive FINE 2007 Napa Cabernet tasting as a clear winner. It clearly left behind the highly respected first and second growths of Napa Valley with its polished, smooth and harmonious style that is performing so well already in its youthful stage. A star wine that made a flashy entry into FINE’s Napa Valley Classification potential growth category.

HOURGLASS BLUELINE VINEYARD CABERNET SAUVIGNON
The Quality of the Wine
“2007 was our second year with the Blueline vineyard. For this wine we have harvest the Cabernet Sauvignons from two blocks planted on different clones – one in late October and one in early November. The blocks were vinified separately and blended just before bottling. The ageing was done with 23 months in barrel from which about 30 percent were new French oak.” Jeff Smith comments.
According to Jeff they will will launch two other varietals Merlot (350 cases) and Cabernet Franc (25 cases) from Blueline vineyards. ”We have also planted Malbec and Petit Verdot and are considering other site appropriate varietals, so we will have some fun components to play with over time.” He adds.

Tasting Notes: Intoxicating high tone aromatics of crushed rose petals and candied violets mixed with toasty vanilla. The 2007 Cab Franc is deep in ripe dark fruit character with a striking richness. Good acidity highlights a brightness indicative of Cab Franc at it best. The floral characters carry through on the palette adding complexity to the dark fruit which lingers through an extended finish. Tannins are polished with supple texture.

Tasting Notes: The ’07 Hourglass Blueline Cabernet is rich and deeply concentrated. Doughy black berry pie, toasted espresso bean and cocoa powder, combine with hints of sage & tar weed eliciting a sweet & savory character. The palette is dense with flavors of cassis, dark fruits, and black cherry.
The tannins are ripe and polished leading to a soft mouth feel and lingering finish.

2007 Merlot
Cases Produced: 575
Varietal Blend: 100% Merlot
Barrel Program: 23 months – Blend of new and seasoned French oak
Suggested Retail Price: $75/750ml bottle

Tasting Notes: The ’07 Hourglass Blueline Merlot is indicative of Merlots grown in this part of Napa Valley (i.e. rich and layered), and one of the main reasons we bought the ranch. These Merlots are a product of mineral rich and nutrient poor soils. Sour cherry, dried cranberry and powdered cocoa aromas mix with a high toned mineral/Mandarin orange zest leading to an explosive aromatic. Flavors of dark sour cherry and strawberry mingle with caramelized brown sugar on the palette. Tannins are silky, with great acidity to frame the ripe flavors, providing a beautiful and layered finish. Cab and Cab Franc get the spotlight, but Merlot is the true star of the ranch.

Medium intense, ruby colour. Seductive nose with cassis, cedar, vanilla and roasted coffee. Intense, medium-bodied palate shows a silky texture. Soft tannins support broad and prestine palate that shows lingering length. Warming alcohol is very well integrated and the wine is harmonious and beautifully balanced.
