Profile: EXPRESSIVE, TENDER ESSENCE OF FRUIT
The intense golden yellow color is a perfect background for the dazzling, chaotic rise of
the delicate bubbles.
The stylish nose evokes a blend of yellow and white fruit, at once elegant and
refreshing, the perfect essence of summer fruit.
The taste is crisp, with a defined minerality lengthening the finale giving a wonderfully
balanced expression of enduring flavour.
Tasting
A full-bodied champagne, excellent as an aperitif: pair it with sliced fresh fruit, or a
mixture of diced Comté cheese and shavings of aged Mimolette.
It can also accompany a meal: pair with delicate savoury dishes: langoustine pastries,
mildly spiced raviolis, foie gras brioche with an apricot confit, or a Brie de Meaux in
puff pastry
Blend
75 % Pinot Meunier, 15 % Chardonnay, 10 % Pinot Noir
The composition is made up of 65 % wines from 2008, reserve wines from 2007 (14%)
and from 2005 (21%) . The blending with the reserve wines guarantees the continuity
of our cuvées TRADITION from one year to the next.
Vinification
Natural clarification (gravity) just after pressing.
Alcoholic fermentation takes place in stainless steel vats at 18-20 °C followed by
malolactic fermentation.
Bottling takes place the following January. Secondary fermentation and ageing "on the
lees" for 24 months minimum.
Dosage at 11 gr /L.
Sizes
Half-Bottle (37.5cl), bottle(75cl), Magnum (150cl) and Jeroboam (300cl).
Store and Serve
Store your bottles horizontally, away from light, at a constant temperature (10-15 °C).
This champagne should be consumed within 2 years.
Best served in flutes, between 6 and 9 °C.
