Created in 1927 by Maurice Doyard, who was cofounder of the CIVC in 1941, our House located in the heart of the "Côte des Blancs" is transmitting its know-how since 4 generations now.

Moulin d'Argensole is since 1952 the place where generations succeed in order to make Champagne and family life the keywords of well-being. The Moulin d'Argensole offers its visitors the invaluable opportunity of tasting our Champagne in a bucolic and heart-warming environment. The garden : In the high season you are invited to enjoy your degustation in the garden, overshadowed by blossoming trees. High quality reception : This is the motto of Champagne Doyard-Mahé. We want to pay special attention to each visitor; therefore we welcome groups of 2 to 20 participants. Don't hesitate to visit us. Meeting us you will easily discover why we love this "Terroir" so much.

As soon as we have left the nice city of Epernay we arrive in the ‘Côte des Blancs’. This is the empire of Chardonnay, a unique white grape from which we are making wines that are known for their finesse, elegance and aromatic power. Vertus is a beautiful city. With 564 Hectares in the 'Côte des Blancs' it is the most important vineyard of the Marne. Every year in September-October the grape harvesting is the place for heart-warming meetings and friendships. Philippe Doyard has his vineyards (around 6 hectares) in the village of Vertus known for its ‘premier Cru’.

Four generations already have passed their knowhow in order to assure the future. Since 1991 we respect still more the environment and the work of men and women busy with the development of our champagne, followed by Réseau Magister. Nature gave us a wonderful product that we appreciate this way. Today Philippe and his daughter Carole produce their wines with the same passion as Carole’s great-grandfather Maurice en grandfather Jean. Our champagne is produced from the Chardonnay grapes. We vinify around 50 000 bottles yearly.  Every step in production and vinification is executed in a traditional way.

After the harvest, the grapevines lose their leaves, making room for maintenance of the plants. Winter will mainly be devoted to the modelling the vines, which is called 'la taille'. In the Champagne region 'la taille' is regulated. It starts as soon as the leaves have fallen, it is interrupted from mid-December to mid-January in order to respect the winter rest period of the plants, and afterwards it starts again until the end of March. Modelling ensures a smooth sap flow to the fruit buds. It gives shape to the grapevine and prepares subsequent work when the leaves begin to grow, which is called "la taille en vert" (green modelling).

The winemaker will keep the leaf growth under control, let the sunlight between the plants, and provide good airflow around the grapes. In early April, after the ‘taille’, the tying of branches starts. The fast-growing branches are placed around the load-bearing iron wires and tied up with small iron wires or threads of bio-degradable material. Around mid-May, when the plants begin to grow, various activities are planned in order to guarantee the yield and quality of the harvest. They are called "les travaux en vert”. We remove all non-fruiting buds growing on the old branches. It is manual labour, and we are going repeatedly through the vineyard.

 

The first fermentation of the champagne wine is the alcoholic fermentation, which converts the must into wine. The yeasts 'eat' the sugar and thus produce alcohol and carbon dioxide, along with other elements that will characterize the flavour of the wine. This fermentation occurs just after the pressing, in stainless steel vats. The malolactic fermentation is the process that converts apple acids (malum is Latin for apple) into lactic acid (lac is Latin for milk) and carbon dioxide. They let the flavours evolve in the wine. The blending of champagne wines is a response to the volatile nature: parcels, harvests and years can lead to quite divergent results. The winemaker will blend wines so as to achieve clearly more than the sum of the qualities mixed. One can assemble wines of several parcels, of different grape varieties (chardonnay, pinot noir, pinot meunier) or of several years. Of course the wine maker can also decide to only assemble one of these dimensions: for example a ‘millésime’ if the vintage of a year is sufficiently exceptional to be elaborated without reserve wines, or an exceptional grape variety as our Chardonnay Blanc de Blancs with its typical flavour. One could even assemble wines of a parcel, a municipality or a hamlet. Filling the bottles – called the ‘tirage’ - may not happen before 1 January of the year following the vintage. Filling, followed by fermentation in the bottle, are intended to make a foaming wine, hence the French name "prise de mousse". To achieve this fermentation a liqueur is added, called the ‘liqueur de tirage’, which is composed of sugar, yeast and a remuage component. After the bottles are filled, they are sealed by a cap in polyethylene, called the "bidule", and then closed with a crown cap. Then they are taken to the basement and placed "sur lattes", i.e. piled in long rows with wooden strips in order to reach more stability. During this fermentation, which lasts 6 to 8 weeks, the yeast will consume all sugars, and bring in the wine next to alcohol and carbon dioxide also esters and superior alcohol contributing to the typical flavour characteristics of the wine.

 

Far away from the light the bottles remain in our basement for a long ripening period. The basement plays a key role in this important stage of the wine-making process, with a constant temperature of 12 °C. This maturation, which is called in French "maturation sur lies" (*), brings very specific aromas in the champagne wine. Between the bottling and marketing must be at least 15 months, at least 12 of which "sur lies". For millésimes that period will be three years. These time limits imposed by law, which are already important compared to other sparkling wines, are in reality much longer. 1. Start by Signing up and creating your profile

- Add a profile picture and more information about yourselves


2. Next, Create your personal Wine World

- Click iFollow (Discover) from the top menu

- Tastingbook has added automatically into your wine world 5-10 of the most active professionals or Pro's as we call them.

- Search for more pros or other users by typing their name in the search field. Then click into my world to those who you want to include in your wine world. This way, you may be notified when they taste wines or comment on them.

- You can also add wines and wine producers into your wine world. This allows you to access the most up-to-date information about them.


3. Invite your friends to join the tastingbook

- Click your username on the top menu and choose invite

- Type your friends email addresses and click send invites

- You can follow the status of your invitation on the same page


4. Create a tasting and do tasting notes

4.1. Click the New tasting button from the top menu.

- Name the tasting as you wish.

- Set the place and time (You can also add your past tasting notes by just changing the date)

- Click the add new wine button on the right to add new wines to the tasting.

- Now go to the box that says 'Click to add the wine'.

- Start by typing the wine or producer name and select the wine from the list that appears.

- After you have selected the wine, the vintage selection will be opened automatically

- Select the correct vintage by clicking on it.


4.2. Next, click My tasting note box and the worlds most advanced tasting

- From the bottom left of the tasting tool you can select in which language you want to use and view tasting notes.

- just do your wine note by clicking the correct adjectives. The adjectives can be activated by clicking once, or de-activated by clicking again.

- Tastingbook Pros will teach you while you taste wines.

At the bottom of the page in the section Show notes of, you may view notes of the professionals by clicking Pro's. If any of the tastingbook pros have tasted the wine before their opinion will show in the gold colored frames around the adjectives on the tasting view.


4.3. After you have completed your wine note, it's time to give Tb points.

Click the box on the bottom right Give points.
In case you want to add any comment or personal thoughts related to this wine, you may tick the note box next to the scores. In this field you may add copy-pasted texts for instance your old notes, etc.


4.4. After you've completed your notes for all the wines, click Close tasting.

You may now share some general thoughts about the tasting or tasted wines and choose with whom you want share your tasting. Set the Tasting privacy to limit the audience who are able to view your tastings information. We suggest you use Everyone as most of the wine experiences are meant to be shared.

Note:

If a wine that you are tasting is not found in our database, please be kind enough to send us an email to: addwine@thetastingbook.com, please include at least the wine name and producer. We will add the wine in tastingbook within 24 hours.


5. Tastingbook is full of information and stories - how to find them.

Tastingbook is full of information about wines, vintages, and wineries and also has over 30.000 pictures of wines. To best way to find what you are looking for is to browse the site from the Browse field in the top right corner.

You may search for wine, vintage, producer, pros or other community members by typing the name in the browse field. You may then choose from the drop down menu.
