History

 

Cavit is a cooperative group uniting 11 Cellars of Trentino with overall 4,500 associated grape growers.
Today Cavit gathers, inspects and selects the wine produced in the associated cellars, supervising each phase: from refining to bottling, all within respect of the environment.

 

Cavit collaborates with the renowned Agricultural Institute of San Michele all’Adige (Edmund Mach Foundation), which trains the most qualified technicians, as well as with other national oenological research centres.
The result is a quality which is being constantly praised in Italy and abroad.

 

Cavit’s history starts in 1950, when some vine-growers, aware of the uniqueness of their land and eager to valorise their products, entered into partnership, establishing a Consortium of associated grape growers, a first draft of Cavit. 

 

The Consortium was born to help the associated wine cellars and promote the “culture” of quality wine throughout the region, supporting the vine-growers throughout each phase.

 

In 1957, the technical function was joined by the commercial function: the Consortium acquired a cellar for the increasing needs of its associates.

 

In 1964, today’s premises of Ravina di Trento was built, and then expanded starting in 1977 until it reached its 80,000 m2 of today.
Since then, Cavit has become the reference point for Trentino’s wine production.

Vineyards

Cavit’s strength results from a network of 11 Cellars, which have preserved Trentino wine heritage and have a full knowledge of the peculiarities of Trentino outstanding growing areas. Cavit has inherited all this through its 4,500 associated grape growers.

 

Cavit is a second-level co-operative, in other words a co-operative of co-operatives, which brings together 11 Trentino’s co-operative cellars.

 

Cavit has over 4,500 winegrowers amongst its associate members, who represent 60% of all wine production in Trentino.

 

Both wine and sparkling wine cellars are located in Ravina, just outside Trento, the capital of Trentino.

 

The company’s representative centre is Maso Toresella, an old villa surrounded by vineyards. Founded in the sixteenth century by the Prince Bishops of Trento who used it as a summer residence, it covers a total area of 6.5 hectares on the banks of Lake Toblino and is one of the “masi” (rural estates) with the most history in the whole Trentino.

 

Cavit today operates mainly on three fronts: research, production and sales.

 

Cavit co-operates with the most specialised national wine research institutes to provide its members with support and assistance during the various stages of production, in order to improve the quality of their wines.
The best products of the member co-operative cellars are examined and selected in the large facilities in Ravina. Here they undergo strict controls at every stage of the finishing and bottling process in order to guarantee the excellence of every single brand.

 

Lastly, Cavit pays attention to every stage in the marketing of its wines through carefully-targeted marketing strategies and policies. These include entering products into the most important and prestigious wine competitions around the world.

 

Cavit’s commitment is to continuously and consistently strive to produce high quality products and disseminate knowledge about Trentino’s wines and their traditions whilst respecting the environment and supporting the growth of its winegrowers in order to maintain the wealth that this growth generates in, and for the benefit of, the local area.

Winemaking

In Trentino, the culture of sustainability and the preservation of the territory are an integral part of its history. Cavit naturally follows this tradition, focusing on four main points:


Cavit has obtained and renewed over time the UNI EN ISO 9001:2008 certification. Further international certificates are the BRC (Global Standard for Food Safety – British Retail Consortium) and IFS (International Food Standards). In 2009, it obtained the UNI EN ISO 14001:2004 certification according to the international regulation for Environmental Management Systems. In July 2014 Cavit has obtained the OHSAS 18001 standard quality certification for the Occupational Health&Safety Management System.

 

For over twenty years, Cavit has adhered to the “Protocol for quality wine production in Trentino”, within a completely sustainable agriculture.

 

A further aspect in which the company has invested over the years is the reduction in energy and water consumption.
With the aim of reducing CO2 emissions from electricity consumption in its various productive activities, Cavit has realised three important solar panels that, generating over 800 Mwh per year, allow the company to cover its entire energy need through renewable sources.


Cavit is developing an innovative technological system able to ration the water needed by the cultivations in virtue of the specific needs of the territory and the weather conditions, therefore eliminating waste.
