The Story

Whether by design or by pure chance, there are in the world exceptional places. Cheval Blanc is one of these. Combining a unique soil with a symbiotic mix of grape varieties, Cabernet Franc and Merlot, Cheval Blanc produces a wine, which has the rare quality of being good at any age. It is without doubt one of the most consistent wines in the world. Cheval Blanc's unique identity is due to its varied soils, early-ripening microclimate, the percentage of Cabernet Franc in the vineyard, and the close proximity of the finest wines of Pomerol.

Château Cheval Blanc has the rare ability to be good at whatever age. It is enjoyable young or as much as a century old in certain vintages. However, a great wine only reveals its full potential and all its subtle nuances after several years in bottle. It takes time to show its true colours and before reaching its peak. Every vintage of Cheval Blanc is made according to the traditional philosophy that great wine needs to age.
It should nevertheless be said that wines with ageing potential go through several periods, and that each one has its own type of attractiveness. This is all part of Château Cheval Blanc's fascinating complexity. Three different bottles of Cheval Blanc from the same vintage drunk at five, twenty, and forty years of age will each show a different facet of the same wine, variations on the same lovely theme. A bottle of fine wine meant to age is like a library of flavours that develop throughout its existence.
Wine is a "cultural" beverage that is very much alive and develops countless nuances over time. That is why this long waiting period needs to be respected. It is crucial to the wine's evolution, so that it can deliver its very best.

So much praise for this wine having profited from a dry and early spring, then from a dry and warm summer until the end of grape picking, providing a yield of 42 ho/h.The wine evolves with time and remains elegant. Sought after by collectors, it still
surprises today by its delicacy and concentration.

In Bordeaux, 1955 began with unstable weather conditions just before summer, but turned into an extremely favorable season by the end of the year. A glorious, sunny and warm, if not hot, period prevailed throughout August and September, until the right amount of much-needed rain arrived. The harvest turned out to be of the highest quality. However, because the vintage was overshadowed by the 1953, it offers value-for-money wines that can still be enjoyed today. Ripe grapes and autumn rains guaranteed an excellent year for Sauternes wines. Wines from this vintage vary greatly in quality, and many are dominated by tannins. Only the best wines, such as Lafleur, Cheval Blanc and Mouton-Rothschild, offer balance and richness.

There was one more wine, one last wine, one that made me pick my pen up off that table, as it was as good as anything served on this glorious day.  The 1955 Cheval Blanc had a scintillating nose that was rich and sexy.  There was an exotic, coconutty edge to it that put it in a unique place, despite the number of wines served before it.  It was full of red fruits and cranberry joined the party, along with spice and gingerbread.  This was a fleshy wine with a great, robust, rocket-fueled finish.  It had the motor oil greatness, and the kinkiness to keep it company.  It kept lifting more with each sip, wanting to be known better by anyone lucky enough to have a sip.  I have been fortunate to have had this wine a few times in my life, but never as great a bottle as this.  I think I am writing sexy a lot more as I get older, I need to start compensating at my age lol, but this was so sexy, with the exclamation point!  I always love the bottles that outpunch their weight class (99).

Very deep, clear-red colour. Intense and complex nose with some development. Fresh mint, dark chocolate, cassis and roasted coffee beans. Full-bodied taste with vividly pronounced acidity, meaty rich and ripe tannins and intense fruit of blackcurrants. Tremendously long finish with a robust and muscular edge. A very youthful and energetic wine that will last well over ten years. The ripeness of the wine, together with the minty and herbaceous aromas, is very much in common with the style of Heitz Martha’s Vineyard’s wines. It amazes with its youthful character.

The 1955 Cheval Blanc is utterly divine – even better than the bottle tasted in 2014. Quite clear and deep in color, it is blessed with a heavenly bouquet: ripe and vivacious red fruit, iodine, tobacco, sous-bois and mint, all wonderfully focused and as energetic as the day it was born. The beautifully balanced palate delivers supple tannins and impressive depth, quite Left Bank in style, with expressive Cabernet Franc and Cabernet Sauvignon. It is structured yet precise and effortless on the finish. If I may use the word with which I summed up this wine before: regal. Served at dinner by Mr. Kelley in Beaune.

Not much left of the label, but Berry Bros bottling seems to be confirmed by the cork and capsule. Top shoulder fill, bright ruby, brick rim. Exotic and floral notes over pure blueberries and figs. Fresh acidity, coffe and fuller palate, ripe tannins, elegant, long and cassis hint. Broadbent: 'Still being shipped in hogsheads to English wine merchants, some excellent Berry Bros' bottlings drinking beautifully at 30 years of age: rich, soft, earthy, completely rounded.' It continues to deliver at nearly 60.

Welcome to the Tastingbook, the world's first intelligent wine-tasting tool and social wine community.

It is easy and fast to use, and I am happy to guide you through it.


1. Start by Signing up and creating your profile

- Add a profile picture and more information about yourselves


2. Next, Create your personal Wine World

- Click iFollow (Discover) from the top menu

- Tastingbook has added automatically into your wine world 5-10 of the most active professionals or Pro's as we call them.

- Search for more pros or other users by typing their name in the search field. Then click into my world to those who you want to include in your wine world. This way, you may be notified when they taste wines or comment on them.

- You can also add wines and wine producers into your wine world. This allows you to access the most up-to-date information about them.


3. Invite your friends to join the tastingbook

- Click your username on the top menu and choose invite

- Type your friends email addresses and click send invites

- You can follow the status of your invitation on the same page


4. Create a tasting and do tasting notes

4.1. Click the New tasting button from the top menu.

- Name the tasting as you wish.

- Set the place and time (You can also add your past tasting notes by just changing the date)

- Click the add new wine button on the right to add new wines to the tasting.

- Now go to the box that says 'Click to add the wine'.

- Start by typing the wine or producer name and select the wine from the list that appears.

- After you have selected the wine, the vintage selection will be opened automatically

- Select the correct vintage by clicking on it.


4.2. Next, click My tasting note box and the worlds most advanced tasting

- From the bottom left of the tasting tool you can select in which language you want to use and view tasting notes.

- just do your wine note by clicking the correct adjectives. The adjectives can be activated by clicking once, or de-activated by clicking again.

- Tastingbook Pros will teach you while you taste wines.

At the bottom of the page in the section Show notes of, you may view notes of the professionals by clicking Pro's. If any of the tastingbook pros have tasted the wine before their opinion will show in the gold colored frames around the adjectives on the tasting view.


4.3. After you have completed your wine note, it's time to give Tb points.

Click the box on the bottom right Give points.
In case you want to add any comment or personal thoughts related to this wine, you may tick the note box next to the scores. In this field you may add copy-pasted texts for instance your old notes, etc.


4.4. After you've completed your notes for all the wines, click Close tasting.

You may now share some general thoughts about the tasting or tasted wines and choose with whom you want share your tasting. Set the Tasting privacy to limit the audience who are able to view your tastings information. We suggest you use Everyone as most of the wine experiences are meant to be shared.

Note:

If a wine that you are tasting is not found in our database, please be kind enough to send us an email to: addwine@thetastingbook.com, please include at least the wine name and producer. We will add the wine in tastingbook within 24 hours.


5. Tastingbook is full of information and stories - how to find them.

Tastingbook is full of information about wines, vintages, and wineries and also has over 30.000 pictures of wines. To best way to find what you are looking for is to browse the site from the Browse field in the top right corner.

You may search for wine, vintage, producer, pros or other community members by typing the name in the browse field. You may then choose from the drop down menu.



If you have any difficulty in navigating the site you may easily get help by clicking the support button on the left side of the page
