The Story
Since 1993, 80 to 90% of the red grapes are destemmed. fermentation is in a mixture of cement and stainless steel tanks. The straight Côtes du Rhône macerates 12-15 days on the skins, before 6-9 months ageing in foudres. The Côtes du Rhône Villages has 15-18 days, with manual pigeage each day.
