Historia
In 1950 Ramón Castaño Santa, son and grandson of winemakers built the winery and began to extend the family vines, however it was only afterwards in 1975 when he adquired his first plot in "Las Gruesas". During the following years and up to the start of the 80s with the procurement of a top of the range bottling machine, Ramón did not stop in his determination for modernisation and quality.
It was at the beginning of the 90s with his three sons: Ramón, Juan Pedro and Daniel, already incorporated into the winery that the winery's international journey began with a presence at the most important wine exhibitions, visits, presentations and wine tastings. It was at this point when the winery was first recognised on a national and international level. Furthermore this presence in new markets necessitated the technological development of the installations to promote better quality and enabled the family to be more competative.
In 2002 the winery was extended by 3.000 m2 on two floors, both benefitting from climate control. This includes a bottle storage area for aged wines with a capacity for 500,000 units which can also be stored in a refrigerated environment in preperation for pre-fermentation maceration.
The procurement of the most advanced machines for maceration, stablisation and vinification on the market was a gradual process:

Carbonic maceration with a selection table and manual seperation of the leaves from the grape bunches, with transport belts.

Traditional maceraters with temperature control and automatic devatting equipment.

"Ganymede system" maceration depositories which take advantage of the carbonic gas naturally occuring in fermentation.
- Medium and small sized depositories which allow selective and experimental vinification.
Technological progression goes hand in hand with the Bodegas Castaño's singular parametre: quality. From here evolution continues to be a reality in all aspects: vines, winery and market, nowadays being a prime model of viticulture in the south east of Spain.
