Richard Juhlin : "A Scent of Champagne - 8,000 Champagne Tasted and Rated"

In his excellent new book, Champagne expert Richard Juhlin presents no less than 8,000 Champagne. He has reserved a special treatment to Jacques Diebolt and family in the chapter On a Journey in Champagne.

The champagne house Diebolt-Vallois is to be found in Cramant, a village in the "Côte des Blancs", whose chalky soil makes the perfect home for chardonnay vines. It is certainly one of the finest terroirs in the Champagne region and is the realm of "blanc de blancs" champagnes (champagnes made from white grapes - chardonnay).

 

Diebolt-Vallois champagnes are the progeny of a united family: Jacques Diebolt and Nadia Vallois are helped by their two children, Arnaud and Isabelle, who are taking an ever increasingly active part in the running of the estate.

 

The Diebolt family has lived in Cramant since the end of the 19th century, and the Vallois family has been cultivating vines in Cuis since the 15th Century. Although Jacques Diebolt started working with his grandfather, it was not until 1978 that the estate underwent a sea-change with the extension of the estate and the construction first of all of cellars, and then a winery.

The Diebolt-Vallois champagne vineyards cover 11 hectares (26 acres) of which the great majority are in Cramant and Cuis, two villages which are classed as Grand Cru (Great Growth) and Premier Cru (First Growth) respectively. Other plots are at Chouilly (another Grand Cru village) and on the hillsides at Epernay (vineyards called Les Toulettes and Les Hautes Justices). All of these are planted entirely in Chardonnay, the grape used to make blanc de blancs champagne. Some vines on the Montagne de Reims and the Côte de Bar complete the estate's holdings, and these are planted in pinot noir and pinot meunier.

 

Cramant is the first 100% Grand Cru village you come to when you enter the Cote des Blancs from the direction of Epernay. The Diebolt-Vallois champagne vines are mainly to be found in the southern part of Cramant, on the way to the village of Avize. The soil consists of a layer of light earth over a chalk subsoil. The East-South-East facing slopes suit the Chardonnay particularly well, and it gives champagnes which at one and the same time show fruit, power and rich texture.

 

The village of Cuis is next door to Cramant. Depending upon the plots they are growing in, the estates' vines benefit from chalky slopes that face either North-West or fully South. Their grapes bring minerality and delicacy with good acidity which must of course be allowed to mellow. The vines from the Epernay slopes give wines that are balanced, round and fat - generally attractive. The vineyards are managed using traditional methods, with a minimum of treatment. The plots which will benefit from it are being progressively grassed over.

The grapes are hand picked and each plot is picked separately and vinified apart. The harvest is either pressed in a traditional vertical press, or pneumatically. Only the "cuvées" - the juice from the first pressing - are kept for all our blanc de blancs. Depending upon the wine, fermentation is either carried out in thermostatically controlled vats, or in wooden barrels. Malolactic fermentation takes place in all the wines except Fleur de Passion.

 

Reserve wines are stocked in a vat or 40 hl casks in a deep cellar, 14 metres under ground to mature gently and steadily. These reserve wines give champagnes Diebolt-vallois warmth and roundness. After bottling, the wines carry out their second fermentation and develop their mousse in cellars, which are hewed out from Cramant chalk. They age there several years before being disgorged and usually dosed at 6 to 8 g/l.

1. Start by Signing up and creating your profile

2. Next, Create your personal Wine World

- Click iFollow (Discover) from the top menu

- Tastingbook has added automatically into your wine world 5-10 of the most active professionals or Pro's as we call them.

- Search for more pros or other users by typing their name in the search field. Then click into my world to those who you want to include in your wine world. This way, you may be notified when they taste wines or comment on them.

- You can also add wines and wine producers into your wine world. This allows you to access the most up-to-date information about them.


3. Invite your friends to join the tastingbook

- Click your username on the top menu and choose invite

- Type your friends email addresses and click send invites

- You can follow the status of your invitation on the same page


4. Create a tasting and do tasting notes

4.1. Click the New tasting button from the top menu.

- Name the tasting as you wish.

- Set the place and time (You can also add your past tasting notes by just changing the date)

- Click the add new wine button on the right to add new wines to the tasting.

- Now go to the box that says 'Click to add the wine'.

- Start by typing the wine or producer name and select the wine from the list that appears.

- After you have selected the wine, the vintage selection will be opened automatically

- Select the correct vintage by clicking on it.


4.2. Next, click My tasting note box and the worlds most advanced tasting

- From the bottom left of the tasting tool you can select in which language you want to use and view tasting notes.

- just do your wine note by clicking the correct adjectives. The adjectives can be activated by clicking once, or de-activated by clicking again.

- Tastingbook Pros will teach you while you taste wines.

At the bottom of the page in the section Show notes of, you may view notes of the professionals by clicking Pro's. If any of the tastingbook pros have tasted the wine before their opinion will show in the gold colored frames around the adjectives on the tasting view.


4.3. After you have completed your wine note, it's time to give Tb points.

Click the box on the bottom right Give points.
In case you want to add any comment or personal thoughts related to this wine, you may tick the note box next to the scores. In this field you may add copy-pasted texts for instance your old notes, etc.


4.4. After you've completed your notes for all the wines, click Close tasting.

You may now share some general thoughts about the tasting or tasted wines and choose with whom you want share your tasting. Set the Tasting privacy to limit the audience who are able to view your tastings information. We suggest you use Everyone as most of the wine experiences are meant to be shared.

Note:

If a wine that you are tasting is not found in our database, please be kind enough to send us an email to: addwine@thetastingbook.com, please include at least the wine name and producer. We will add the wine in tastingbook within 24 hours.


5. Tastingbook is full of information and stories - how to find them.

Tastingbook is full of information about wines, vintages, and wineries and also has over 30.000 pictures of wines. To best way to find what you are looking for is to browse the site from the Browse field in the top right corner.

You may search for wine, vintage, producer, pros or other community members by typing the name in the browse field. You may then choose from the drop down menu.
