Historia

The Castello di Volpaia was built in the 11th century as a fortified village on the Florence/Siena border. Although only part of the original protective walls and two of its six towers are still standing, the medieval layout and buildings within the village are still intact, making Volpaia undoubtedly one of the best preserved villages of its period.

The most important renaissance building is the Church of Sant’Eufrosino. Attributed to Michelozzo, it was deconsecrated in 1932 and declared a National Monument in 1981.

In 1250 Volpaia became an important part of the Lega del Chianti. One of the village’s most illustrious families were scientific instrument makers. The family took its surname from the village itself and during the renaissance Benvenuto and Lorenzo della Volpaia became famous. Not only was the latter a friend of Leonardo da Vinci but their instruments are still on view at the Science Museums in Florence and Greenwich, as well as the Adler Planetarium in Chicago and Palazzo Vecchio in Florence.

Throughout the centuries the families who owned the village and its vineyards dedicated themselves to the arts and wine making and thanks to their foresight the village has managed to keep its original architectural features.

Cellars

Before being turned into wine and appearing in a bottle on your table, our grapes travel around the entire village. In fact visitors can take a guided tour of the castle cellars starting from the sacristy and ending up in the cellars of the various churches which are now dedicated to the making and aging of Volpaia wine.

The Vendemmia

The vendemmia, or grape harvest, is obviously the busiest and most exciting time of the year as it’s the culmination of everyone’s hard work throughout the rest of the year. We usually start picking the grapes that ripen earliest, Sauvignon and Chardonnay, in the second week of September. We then go on to the Merlot and Syrah and, by the first half of October, finish gathering the Sangiovese and Cabernet.

The grapes are all hand picked and carried in boxes holding not more than 15 to 20 kilos so that they reach the cellars in perfect condition.

Vinification

The wine is made in two cellars situated in the heart of Volpaia itself. One cellar was built in a centuries old house that belonged to the Stiozzi family and the other is in another historic building that has been used for this purpose for several hundred years.

As soon as the grapes arrive at the cellars they are destalked and gently squeezed. Their must is immediately transferred to stainless steel fermenting vats, holding from 60 to 120 hectolitres, furnished with pistons and a system that automatically controls the temperature. This modern technology extracts the best substances in the grapes, those that give colour, structure, body and smoothness to the wine.

While their own yeasts are fermenting the grapes, they are frequently stirred and moved. This movement continues through the next phase of maceration when the must has already turned into wine and is left to rest on the grape skins which enrich it with their finest components.

Aging

Once this cycle is completed, the wine is drawn off the skins and the aging process started in Slovenian oak casks holding about 30 hectolitres or in French oak barrels containing 225 litres. This process takes from 12 to 24 months depending on whether the wine involved is Chianti Classico, Reserve or one of the crus.

The wine is aged underground in cellars beneath ancient village buildings such as the Church of San Lorenzo, the Commenda (another large church) and the original one in Via Castellana. The atmosphere in these three cellars guarantees the perfect temperatures and humidity levels that allow the wine to evolve from something quite rough to a product of great elegance and complexity.

Refinement

Once the wine has aged, it is finally bottled in a very modern plant that allows the wine to maintain all its qualities. However, before it is put on the market, the bottles are left to rest in the cellars below Palazzo Canigiani where, in the dark and at a controlled temperature, the wine blends and develops its unique characteristics.

It is easy and fast to use, and I am happy to guide you through it.


1. Start by Signing up and creating your profile

- Add a profile picture and more information about yourselves


2. Next, Create your personal Wine World

- Click iFollow (Discover) from the top menu

- Tastingbook has added automatically into your wine world 5-10 of the most active professionals or Pro's as we call them.

- Search for more pros or other users by typing their name in the search field. Then click into my world to those who you want to include in your wine world. This way, you may be notified when they taste wines or comment on them.

- You can also add wines and wine producers into your wine world. This allows you to access the most up-to-date information about them.


3. Invite your friends to join the tastingbook

- Click your username on the top menu and choose invite

- Type your friends email addresses and click send invites

- You can follow the status of your invitation on the same page


4. Create a tasting and do tasting notes

4.1. Click the New tasting button from the top menu.

- Name the tasting as you wish.

- Set the place and time (You can also add your past tasting notes by just changing the date)

- Click the add new wine button on the right to add new wines to the tasting.

- Now go to the box that says 'Click to add the wine'.

- Start by typing the wine or producer name and select the wine from the list that appears.

- After you have selected the wine, the vintage selection will be opened automatically

- Select the correct vintage by clicking on it.


4.2. Next, click My tasting note box and the worlds most advanced tasting

- From the bottom left of the tasting tool you can select in which language you want to use and view tasting notes.

- just do your wine note by clicking the correct adjectives. The adjectives can be activated by clicking once, or de-activated by clicking again.

- Tastingbook Pros will teach you while you taste wines.

At the bottom of the page in the section Show notes of, you may view notes of the professionals by clicking Pro's. If any of the tastingbook pros have tasted the wine before their opinion will show in the gold colored frames around the adjectives on the tasting view.


4.3. After you have completed your wine note, it's time to give Tb points.

Click the box on the bottom right Give points.
In case you want to add any comment or personal thoughts related to this wine, you may tick the note box next to the scores. In this field you may add copy-pasted texts for instance your old notes, etc.


4.4. After you've completed your notes for all the wines, click Close tasting.

You may now share some general thoughts about the tasting or tasted wines and choose with whom you want share your tasting. Set the Tasting privacy to limit the audience who are able to view your tastings information. We suggest you use Everyone as most of the wine experiences are meant to be shared.

Note:

If a wine that you are tasting is not found in our database, please be kind enough to send us an email to: addwine@thetastingbook.com, please include at least the wine name and producer. We will add the wine in tastingbook within 24 hours.


5. Tastingbook is full of information and stories - how to find them.

Tastingbook is full of information about wines, vintages, and wineries and also has over 30.000 pictures of wines. To best way to find what you are looking for is to browse the site from the Browse field in the top right corner.

You may search for wine, vintage, producer, pros or other community members by typing the name in the browse field. You may then choose from the drop down menu.
