Lieu-dit «Les Motellettes» - Grape variety: 100% Chardonnay
Harvest : 2008
Single 1,5-acre plot planted with Chardonnay in 1961, located in the heart of our Grand Cru Bouzy vineyards.
«Mother plot» of our own vineyards, «Les Motellettes» are used for replanting our plots, according to the so-called «sélection massale». We thus perpetuate the work of our ancestors and protect the genetic identity of the Pierre Paillard vineyards, a guarantee of the House style.

Vinification
The grapes are picked when perfectly mature and carefully pressed, with great attention to their quality. Only the juice from the first two pressings is vinified. The heart of the cuvée is then vinified separately: after the alcoholic and malolactic fermentations, the wine is kept on its lees for eight months.

Ageing
In our 19th century cellars, at a depth of 16 meters and a constant 10°C temperature, our young wines become. The combined effect of a second slow fermentation (2 months) and a 3-year ageing on their lees bring out the desired balance and texture.
Tasting
This Champagne, an original Chardonnay, truly expresses the Bouzy terroir, better known for its Pinot Noirs.
The bouquet delicately expresses aromas of citrus and dried fruit.
The palate is intense, creamy and voluptuous. Citrus (lemon, citron) and exotic fruit (pineapple, passion fruit) blend in with flowery notes (jasmine) and juicy fruit (white peach). Precise, neat, this wine develops in the mouth a subtle balance between fruit and minerality.
