Wine Information
Lignier practices 100% destemming, followed by vinification in traditional lined cement vats, using only indigenous yeasts. Temperatures are allowed to climb to 33 or 34°C during fermentation, and pigeage is by foot to ensure good extraction of colour and tannin. After 2 weeks on the skins, the young wines are drawn off and some press wine blended back for structure. Malolactic conversion takes place either in cask or sealed vat.
