The husband and wife team of Niels and Bimmer Udsen established Castoro Cellars with the goal of producing world-class wines from Paso Robles-appellation grapes. Vineyards

Castoro Cellars sources grapes almost exclusively from their Estate Grown, sustainably farmed vineyards.  Nearly all of their fruit comes from within the Paso Robles AVA. They select their grape sources carefully, matching vineyard location with the grape variety that thrives in that particular setting and employing vineyard techniques that produce the desired characteristics of each varietal.

Winemaking

For over 30 years, head winemaker Tom Myers, has been making wine on the central coast.  Tom has been involved, in one-way or another, with every vintage at Castoro Cellars and has been our head winemaker for over 20 years. Solar Panels:

At Castoro Cellars we understand the importance of finding alternative energy sources that will help us lessen our impact on the natural environment. In 2006 Castoro Cellars installed 42 solar panels at our Cobble Creek vineyard and installed an even larger solar panel system on the roof of our events room located beside the tasting room in Templeton.
