History

The small estate of Jérôme Prévost is located in the village of Gueux, west of Reims. Prévost received a two-hectare Les Béguines nursery as a legacy from his grandmother, who did not cultivate the orchard himself but was entrusted to other farmers. Encouraged by his good friend, Anselme Selosse, he produced his first wine of his own in 1998. Vineyards

In practice, Prévost produces only one Champagne from the Pinot Meunier variety at the Les Béguines vineyard. The annual production is only about 13,000 bottles. The soil of the shelter is sand and limestone, rich in fossils. Viticulture is organic and no chemical fertilizers or toxins are used. The aim is to produce as ripe grapes as possible.

Winemaking

The wine is allowed to ferment and ripen in 450-600 liter oak barrels with wild yeast and the basic wine is not clarified or filtered. The entire cap is changed at one time after about 18 months of bottle aging. Prévost Champagne is Extra Brut but virtually no sugar is added. non dosé champagne.
