The Story
For more than fifty years, our first cuvee, Brut Premier Cru, has been the emblem of Bonnet Ponson’s style. It is an elegant and complex Champagne that has a perfect balance between vinous character and aromatic freshness.
The Brut Premier Cru comes from a skillful blend of the three Champagne grape varieties and over at least three different years (forty percent of reserve wine). After a slow bottle fermentation in our cool and stable cellar (conditions for an refined sparkling) the bottles are aged for thirty six months.
The assortment of vine fields we cultivate for this cuvee constitutes a real mosaic of different terroirs which bring aromatic and flavorful depth. They are situated in the Premier Cru villages of Chamery, Coulommes la Montagne, and Vrigny and grow on sandy, clayey, and calcareous soil. Mainly on the hill sides, they face from the northeast to the south, giving them protection from the main west winds and morning freeze of springtime in Champagne. This privileged situation ensures the Brut Premier Cru constant quality each year.

Wine Information
Visual Aspect: Golden yellow and gleaming hue.
Nose: Powerful yellow fruit aromas, with fragrance of white flower and fresh butter.
Palate: The attack is frank, a beautiful tonicity. The effervescence remains soft and airy. The mid palate shows a nice structure where vinous flavors, citrus, and peach perfectly balance. The finish is suave and persistent leaving a sweet pastry taste.
Match with food: Perfect for appetizer. It could also be assessed with a salmon carpaccio or trout with cream. In its extra brut version, it goes very well with oysters and shellfish.
