Wine Description
The Story
The grapes are handpicked, lightly crushed, but never destemmed. Fermentation temperatures are controlled at 30-32°C, with regular pumping over, before transfer to 600 litre "demi-muids" and 228 litre "pièces" for the malolactic conversion. Ageing is in Allier oak casks, of which 15 to 20% are renewed each year. The wine is bottled unfiltered after 18 months.
