Historia

Domaine Ollier-Taillefer is a family estate in the north-eastern part of the AOC Faugères appellation in central Languedoc, Southern France. It is run by Luc and Françoise Ollier, brother and sister, the 5th generation of locally-born wine-makers and today responsible for these 36 hectares of AOC Faugères vineyards. In 2020, Florent Ollier, Luc's youngest son, joined the estate and became a partner with his father and aunt. The story continues...

In 1977, our parents, Nicole and Alain Ollier, sold the first bottle produced on the estate… At the time, Faugères wines were only VDQS (“vin délimité de qualité supérieure”). AOC (“appellation d’origine contrôlée”) status was achieved in 1982 (decree of 5 May). Luc joined the estate in 1990, Françoise in 2002, Florent in 2020.

The vines face due south, at an altitude varying from 200 to 350 meters depending on the plot, on shale hills with steep slopes.
 
The grape varieties are traditional, composed mainly of black grenache, black carignan, syrah, mourvèdre, cinsault for our red and rosé AOC Faugères wines, and roussanne and rolle (or vermentino), for white AOC Faugères.
The grapes are hand-picked  and carefully sorted before they arrive in the cellars.
 
We are fully aware of the fragility of this schistous ‘terroir’ and we have chosen to care for it by working as naturally as possible. This is why we have used “enlightened” growing techniques for many years.
 
Our schists were formed at the end of the primary era, in Viseen between -330 and -300 million years ago. At that time a very large mountain chain, the Hercynian chain existed (of a size comparable to the Himalayas) and on the edge of this mountain chain was a sea with very deep marine pits like the pits that are found near from Japan or the west coast of South America.
 
At the bottom of these pits accumulated materials taken from the nearby mountains: very fine clay particles and at other times grains of sand.
 
These deposits, which accumulated over 30 million years, were buried deep in the earth's crust by plates movements, compressed and very heated: the clays became schists which disintegrate in sheets and the sands became sandstone. Then during the following 300 million years, these formations were brought to the surface, the layers were raised vertically sometimes and again fractured by these movements to achieve their current appearance.
Our shales have not been compressed as much as others, and are said to be of sedimentary origin because the starting minerals have remained essentially the same.
All this gives us soils formed by a clay matrix which nourishes the vine, retains water in depth, with pebbles formed by blocks of sandstone. The inclination of the layers (this is called 'dipping of the layers') allows the roots to intrude into the rock, enlarge the cracks and fetch water and food in depth. The soils hardly exceed 50 cm deep and are therefore not very fertile and fragile. The whole is very homogeneous, slightly inclined towards the south, located in a balcony on the fertile sandstone plain of the Biterroise plain. You can produce very great wines, with a nice balance of freshness / alcohol, very silky tannins from their youth, complex fruit and garrigue aromas and of course capable of aging in a good cellar.
 
In September 2009 we started the conversion of our entire vineyard to Organic Agriculture (AB). September 2012, it's done, we obtain our certification in Organic Agriculture (wine and vineyard). After 10 years of responsible cultivation, this is the logical continuation of the work.
 
The construction of our new winemaking building was completed in 2012Canadian wells for gentle and natural air conditioning. Also the porous limestone 'pierre du Gard' building blocks allow the building to 'breath'. We use gravity to avoid excessive pumping. Everything is conceived to avoid any waste of water or electricity.
 
In 2020, a photovoltaic shading system will be installed in the winery. The electric production of this shading device will make the winery autonomous.

We produce an average of 1100 hectolitres:
  • 800 hectolitres of red AOC Faugères
  • 240 hectolitres of rosé AOC Faugères
  • 80 hectolitres of white AOC Faugères
All our wines are bottled on the estate and sold by us.

It is easy and fast to use, and I am happy to guide you through it.


1. Start by Signing up and creating your profile

- Add a profile picture and more information about yourselves


2. Next, Create your personal Wine World

- Click iFollow (Discover) from the top menu

- Tastingbook has added automatically into your wine world 5-10 of the most active professionals or Pro's as we call them.

- Search for more pros or other users by typing their name in the search field. Then click into my world to those who you want to include in your wine world. This way, you may be notified when they taste wines or comment on them.

- You can also add wines and wine producers into your wine world. This allows you to access the most up-to-date information about them.


3. Invite your friends to join the tastingbook

- Click your username on the top menu and choose invite

- Type your friends email addresses and click send invites

- You can follow the status of your invitation on the same page


4. Create a tasting and do tasting notes

4.1. Click the New tasting button from the top menu.

- Name the tasting as you wish.

- Set the place and time (You can also add your past tasting notes by just changing the date)

- Click the add new wine button on the right to add new wines to the tasting.

- Now go to the box that says 'Click to add the wine'.

- Start by typing the wine or producer name and select the wine from the list that appears.

- After you have selected the wine, the vintage selection will be opened automatically

- Select the correct vintage by clicking on it.


4.2. Next, click My tasting note box and the worlds most advanced tasting

- From the bottom left of the tasting tool you can select in which language you want to use and view tasting notes.

- just do your wine note by clicking the correct adjectives. The adjectives can be activated by clicking once, or de-activated by clicking again.

- Tastingbook Pros will teach you while you taste wines.

At the bottom of the page in the section Show notes of, you may view notes of the professionals by clicking Pro's. If any of the tastingbook pros have tasted the wine before their opinion will show in the gold colored frames around the adjectives on the tasting view.


4.3. After you have completed your wine note, it's time to give Tb points.

Click the box on the bottom right Give points.
In case you want to add any comment or personal thoughts related to this wine, you may tick the note box next to the scores. In this field you may add copy-pasted texts for instance your old notes, etc.


4.4. After you've completed your notes for all the wines, click Close tasting.

You may now share some general thoughts about the tasting or tasted wines and choose with whom you want share your tasting. Set the Tasting privacy to limit the audience who are able to view your tastings information. We suggest you use Everyone as most of the wine experiences are meant to be shared.

Note:

If a wine that you are tasting is not found in our database, please be kind enough to send us an email to: addwine@thetastingbook.com, please include at least the wine name and producer. We will add the wine in tastingbook within 24 hours.


5. Tastingbook is full of information and stories - how to find them.

Tastingbook is full of information about wines, vintages, and wineries and also has over 30.000 pictures of wines. To best way to find what you are looking for is to browse the site from the Browse field in the top right corner.

You may search for wine, vintage, producer, pros or other community members by typing the name in the browse field. You may then choose from the drop down menu.



If you have any difficulty in navigating the site you may easily get help by clicking the support button on the left side of the page
