I'm always fascinated to see how Pinot Gris evolves with age and here's an example of Pinot Gris showing its brawn. Château de Riquewihr Domaines Dopff & Irion’s Les Maquisards still has loads of life with its pear, poached apples and quince flavours, honeyed accents and a round, luscious palate. There's some sweetness here, so serve with Sichuan hotpot, spicy Mapo tofu or an assortment of mature cheeses.
