Once bunches are selected, they are transported to the winery in boxes. Precise elimination of stalk, gentle roller crushing of grapes. Alcoholic fermentation in stainless steel tanks, adding of selected yeasts, temperature control between 28 and 30 ºC. Maceration time with residue: 25 days. Pneumatic pressing. Transfer elimination of thick flock in winter. 45 % of the wine is placed in French oak barrels for 7 months.
