When the Itarte family decided to establish the Cortijo los Aguilares winery, they were already aware of the fact that the secret of a great product resides in the smallest details. For this reason, from the planting of the first vines to the last detail of the bottling process, every stage of the production is meticulously planned. This is what enables us to make such outstanding wines, fit for the most demanding palates.

The 18 hectares of vines were planted in 1999, with the philosophy of INTEGRATED PRODUCTION in order to maximise the utility of the varieties of grape: Petit Verdot, Tempranillo, Pinot Noir, Syrah, Merlot and Cabernet Sauvignon. The soil is high in clay, with plenty of limestone, a combination that in the hot summers helps the vines to retain the humidity provided by the spring rains. Weed elimination is done by hand in order to avoid the use ...

The grape harvest is done by hand, and the smallest size collection boxes are used so as to preserve the integrity of the fruit. The first 24 hours are spent in a cold chamber at around 2ºC which reduces the amount of sulphates that are used to only the absolutely necessary. We use exclusively the produce from our own vineyards, in this way being able to rigorously guarantee the quality and the final selection of the grapes used in the winemak...
