Bodegas Baigorri have an extremely innovative and contemporary philosophy. Rigorous grape sorting is followed by a winemaking process aiming to avoid oxidation and excessive oak and maximise fruit expression (the opposite of historical Spanish winemaking). Unique cone fermenters provide excellent skin contact before maturation in new, one and two year oak for a relatively short time (12 – 18 months) before extended maturation in bottle.
