Winemaking

Our Brewer-Clifton vineyard team exclusively farms and manages five “monopole” vineyards, from which we receive 100% of the fruit. All vineyards are located within 8 miles of the winery and all grapes are harvested in the cool, early morning, arriving to the winery by 8:00 am. This focus achieves ultimate quality and balance in the wines.

Inside information

The wax seal

To penetrate the wax bottle seal, simply imagine that the wax is not there and drive right through it with a waiter’s style corkscrew. The seal should cleanly sever as it would if you attempt to cut through it with a knife. Warming the wax in the palm of your hand for a moment prior to opening is also helpful.

    In summary, it is clear that the wines of Brewer-Clifton are crafted by perfectionists seeking to produce something very distinctive and individualistic. As I noted above, many of these wines are better with age than I ever suspected, and they have the ability to improve dramatically in the bottle and last much longer than I imagined. Kudos to Greg Brewer and Steve Clifton.
