The harvest is done at night. The grapes are picked according to their particular varieties and undergo destemming and de-stalking. They are pressed straight away and undergo a settling of the lies at a low temperature. During the fermentation, which takes about 10 to 15 days, the temperature is kept down to 16° - 18°C.
