The grapes go through a cold maceration, part of the stems is left, and fermentation takes place under the natural action of indigenous yeasts in wooden vats. She does not perform much pigeage or remontage.  After the pressurage the wines are transferred into barrels of which a third to two third are new for a period of 15 to 18 months without racking, so the wines stays on its lees during all élevage.
