History

Patrick Piuze was born in 1973 in Quebec, Canada. At the age of eighteen, Piuze met Marc Chapoutier, who inspired him to seek a career in the wine world. Piuze traveled for years around the world, working on vineyards in Australia, South Africa and Israel. After returning to Canada, Piuze founded a wine bar called Le Pinot Noir in downtown Montreal.

However, his career as a caterer did not fully satisfy him and in 2000 Piuze moved to Burgundy, France, and began work at Oliver Leflaive’s winery, in the village of Puligny-Montrachet. Piuze’s gifts were quickly spotted and in his second year he was appointed winemaker of Olivier Leflaive’s Chablis production. In the service of Leflaive, he was hired by La Maison Verget (Jean-Marie Guffens), whose wines are known for their fine terroir style. The career progressed at a fairly fast pace and soon Piuze was already at the house of Jean-Marc Brocard as cellar master. In 2008, however, Piuze decided to become an entrepreneur and set up a house bearing his own name.

Vineyards

In his previous jobs, Piuze got to know the best winegrowers and orchards in Chablis, so he immediately managed to make contracts with the best small farmers. The idea is to produce Chablis wines with a strong terroir character, from grapes of old vines. Piuze closely monitors the cultivation of the orchards and the crop is harvested entirely by hand. Many of Piuze’s orchards are located next to the legendary Raveneau orchards.

Winemaking

The wines are fermented in steel tanks and some of the wines are allowed to mature in 6-8 year old oak barrels, which are always old. Piuze strives for a clean and mineral style that is not obscured by oak aromas. Chaptization is avoided and the use of enzymes and other winemaking ingredients is not part of Patrick’s brewing techniques. Piuze produces about twenty different Chablis wines, from the Petit Chablis level to the best Grand Cru wines. The annual output is more than 100,000 bottles. The first vintage of the house was in 2008 and Piuze has already received a lot of positive attention from the world’s wine press.
