Patrick Piuze was born in 1973 in Quebec, Canada. At the age of eighteen, Piuze met Marc Chapoutier, who inspired him to seek a career in the wine world. Piuze traveled for years around the world, working on vineyards in Australia, South Africa and Israel. After returning to Canada, Piuze founded a wine bar called Le Pinot Noir in downtown Montreal.

In his previous jobs, Piuze got to know the best winegrowers and orchards in Chablis, so he immediately managed to make contracts with the best small farmers. The idea is to produce Chablis wines with a strong terroir character, from grapes of old vines. Piuze closely monitors the cultivation of the orchards and the crop is harvested entirely by hand. Many of Piuze’s orchards are located next to the legendary Raveneau orchards.
The wines are fermented in steel tanks and some of the wines are allowed to mature in 6-8 year old oak barrels, which are always old. Piuze strives for a clean and mineral style that is not obscured by oak aromas. Chaptization is avoided and the use of enzymes and other winemaking ingredients is not part of Patrick’s brewing techniques.
