The Story
Blend: 60 % Pinot Noir, 40 % Chardonnay.
Average age of vines: 30 years.
Origin: Aube, in the southern-most tip of the Champagne region.
Soil: Limestone-clay soil and subsoil.
Altitude: between 250m and 320m.
Climate: Continental with oceanic influence.
Plantation density: 8,650 vines/ha.
Yield: approx. 10,500 kg/ha or 62 Hl/ha.
Viticulture: vines cultivated using integrated viticultural methods and rationalised plant-health treatments, hand trellising and regular ploughing which allows our family-run estate to obtain level 3 certification "HEV" (High Environmental Value) from the Grenelle Environment Forum.
Pressing: whole bunches by pneumatic presses, use solely the juice from the first pressing.
Fermentation: Alcoholic and malolactic fermentation in temperature controlled stainless steel tanks.
Ageing: minimum 36 months on racks after bottling.
Dosage: 9g/l
Tasting notes: Fine, intense bubbles, persistent 'collar', magnificent pale gold colour with green highlights. A beautifully aromatic finesse on the nose, with elegance and sensuality, highlighting the subtle art of the blend of chardonnay and pinot noir. This Champagne will delight you with its bouquet, offering a delicious blend of yellow fruits - Mirabelle plum and apricot - and white fruits - vine peach - combining to perfection. This exotic, fresh wine will really wake up your taste buds with its explosive, citron character with a touch ofmineral and a rich finish of pastries and confectionery. The attack of this Champagne is wonderfully fresh. Good weight in the mouth, refreshing and flavourful, not to mention its liveliness, elegance and femininity.
