The Story
This wine is a result of an ambitious project of Julien Brocard, the son of Jean-Marc, who joined the company in late 1990s and established the Boissonneuse project in 1998 in purpose to create Chablis wine respecting biodynamic farming with the Kaizen principle.
The Kaizen principle is a Japanese management philosophy that literally translates to 'continuous (Kay) improvement (zen)'. The method helps the productivity of one organization to improve. It does that by taking simple steps that lead to improvements. Working according to this principle never stops.
Cultivation is carried out in harmony with the rhythms of nature and planetary cycle. The parcel is on a hillside beside the village of Préhy and contains kimmeridgian soil of exceptionally high quality, with very fine minerals. The alternate layers of limestone and clay contain many fossils, which appear on the ground.
