100% Sauvignon Blanc. 30% of normal volume so they will produce around 1,000 bottles and 500–600 magnums. 'We want to show that you can make a great white wine on the right bank', says Baptiste Guinaudeau, 'clay soils are more important because you need water during the summer. Minerality comes from limestone or schist but the common point for great whites is clay as the years get drier'. 5–7 days on lees in small tanks (8 hl) and then moved to barrel, never racked, just some stirring with a little 'golf club', to 'keep the dynamism in the wine'. 17th vintage.
Intense herbal aroma but not unripe, salty citrus, grapefruit purity, orange zest. Super-intense but not just fruity. There's grapefruit and grapefruit pith. Concentrated and full of energy. Creamy and chalky at the same time – complex texture. Incredibly moreish. Mouth-watering freshness balanced by depth of minerally fruit. (JH)
