Chaven perhe on Hermitagen kukkulan tunnetuin viljelijä. Perheellä on ainutlaatuinen historia; vuodesta 1481 alkaen viininteon vastuu on siirtynyt isältä pojalle katkeamattomana ketjuna aina tähän päivään asti. Nykyinen vetäjä on Jean-Louis Chave, isä Gérardin viettäessä jo ansaittuja eläkepäiviä. Chaven omistuksessa on noin 14 hehtaaria viinitarhoja eri puolilla Hermitagen kukkulaa, jonka alueelta Chave tuottaa kolmea viiniä: Hermitage, Hermitage Cuvée Cathelin (vain parhaina vuosina) ja Hermitage Blanc. Yhteensä Hermitagen kukkulan pinta-ala on noin 125 hehtaaria. Chaven omistamista tarhoista 9,4 hehtaaria on omistettu syrah -lajikkeelle ja 4,6 hehtaaria vaaleille marsanne- ja roussanne -lajikkeille. Hermitagen alueen perinteitä kunnioittaen Jean-Louis Chave sekoittaa mielellään eri palstojen rypäleitä sen sijaan, että hän tekisi monta cuvéetä eri tarhojen nimillä (kuten esim. Chapoutier). Hermitagen kukkulalla on monta erilaista maaperää ja nimettyä viinitarhaa. Chaven palstat sijaitsevat mm. Les Bessards-, L’Hermite-, Le Meal-, Peleat-, Roucule-, Maison Blanche- ja Diognieres-viinitarhoissa. Yhteensä Hermitage jakautuu 18 eri tarhaan ja näistä Chave omistaa palstoja yhdeksässä tarhassa. Chaven punainen Hermitage on sataprosenttisesti syrah-lajiketta, ja valkoisen suhteet ovat yleensä 80 prosenttia marsannea ja 20 prosenttia roussannea. Köynnösten keski-ikä on 60 vuotta. Alkoholikäymisen jälkeen Chaven viinit saavat kypsyä pääosin vanhoissa tammitynnyreissä noin 18 kuukauden ajan. Jean-Louis pyrkii viineissään puhtaaseen terroir-luonteeseen ilman, että vahva tammi peittää niissä kaiken muun alleen. Chaven viinit ovat legendaarisen upeita, alueelleen tyypillisiä ja pitkää kellarointia kestäviä. Hermitagen tarhojen ohella Chaven perhe omistaa tarhoja myös Saint-Josephin (5 ha) ja Crozes-Hermitagen (0,9 ha) viinialueilla. Saint-Josephin jyrkät roomanaikaiset graniittiterassit tuottavat parhaimmillaan lähes Hermitagen tasoista, mineraalista ja aromikasta viiniä.
