Trockenbeerenauslese (“dried berries selection”) comes from grapes that have been affected by noble rot, a condition that allows the grapes to dry out completely, shriveling like raisins. When pressed, the juice from these grapes is very sweet and concentrated, creating wines with complexity and rich flavors.
