Vinification

In the 1990s, they pioneered a gentle extraction method in California using small French oak barrels as fermentation vessels. Grapes are placed by hand into open barrels; once filled, the heads are sealed back on, and the barrels are rolled during fermentation. This method eliminates the need for punch-downs or pump-overs, preserving the integrity of the grape skins and ensuring a soft, refined tannin profile.
