When Bernhard took over the family's vineyard, he began to develop the farm's activities further. He bought new steel tanks in the basement, started to shut the bottles on the Stelvin helicopter heights and brought his own philosophy to the wine for the importance of respect for nature. Bernhard has converted many vineyard plots to biodynamic and wines from these plots are RESPEKT-certified.
Bernhard is particularly concerned about the careful working of the hedgehog. He utilizes herbaceous plants to improve soil quality, reduce erosion and respond to challenges she faces with biodynamic tinctures and homeopathic caries. In accordance with the biodynamic principles, all the work of nurseries and the basement makes a holistic perspective in mind.
Bernhard Ott noticed that after switching to biodynamic cultivation, he could start harvesting several weeks earlier. This allows the grapes to reach physiological maturity before, and their sugar concentrations will not get too high, resulting in an excessive alcohol content.
Ott's wines have a structure, complexity and sophistication. Wines are balanced and they uniquely reflect the soil of their growth area.
